Just attended a master class with the co-founder/owner of Yukon Two Brewers. They have just released their #09, which is a PX finished malt. They ordered their barrels from Spain, and before shipping, they were asked, "How much sherry do you want in the barrel?" Having never ordered sherry barrels before, they said, "20 litres...?" "Okay." So their "empty" barrels came with some 20 L each of the most delectable sherry inside 😊 Apparently, this serves a few purposes: 1. It helps to keep the barrels freshly seasoned. 2. Before reusing the barrel, you can pour the sherry back in to help re-season it somewhat. 3. It helps to prevent the formation of mould during shipping. 4. Cheap sherry 😉

Brown Forman has a cooperage 10 minutes from me in Jackson County, Alabama. The freshly harvested white oak is processed here into staves and then sent to Moulton, Alabama to be made into barrels.

I would like to know if you can do a barrel out of fruit woods? Say apple or pear? and does using different wood for the barrel kinda like the same as with smoking meats and using different hard woods to place in different flavors? Also starting with Z and moving to A is a nice twist for the patreon's.

I think they would be prohibitively expensive. Think about the diameter of a mature oak tree versus a mature fruit tree. You would need multiple trees to construct a barrel, as opposed to a portion of one oak tree.

OK, so he explained why not red oak, but why not other types of wood, like cherry, apple, pear, hackberry, hickory? Probably not walnut. But there must be tons of other woods you could use for a barrel. Whole new flavor worlds...

I've been here since then too, but oddly I don't sub to Modern Rogue. For some reason I was getting a lot of whiskey-relevant vids in my recommendation at the time, and theirs bubbled to the top at one point. I never did sub to MR, but here I am. Still kind of left out of the Tribe since I don't do FB and I'm not about to fly from California to Austin for the distillery opening, but no reason not to keep watching I guess.
