I'm still not sure about the answer to this--I dried poblano peppers to make ancho peppers but now I'm thinking only the red ones taste like anchos. The red ones had a great, raisiny flavor. The green ones? Meh. Wish I had let more of them ripen...I'll have to wait a bit for the next batch.

I bought some today to collect the seeds for planting next year, but they are green to dark brown. Is this poblano turn red when ripen?

they do turn red when ripe, but I don't know how red they would have to be to collect seeds! They tend to go bad quickly once they are red. Save a bunch!
