My way is a little different I mixed eggs and all cut veges ( onion, tomato, green chillies) together and then in a kadahi I heat up little bit oil, jeera, red chilli powder, methi seeds, rai seeds, lil bit heeng, and then put the batter in kadahi, after stirring for a while I add some salt and again stir it till the desired size of bhurji obtained and then cover it with a lid and keep on med flame for a minute or two, then turn off the gas. The steam due to water from tomatoes keep the bhurji soft and spongy and all the veges dont feel like fried in oil instead they have their own flavour, the onion will give a little sweet flavour and an unique aroma by this method.
