Instead of buying the jarred stuff, try making your own prepared horseradish at home. Although its pungency may be tear-inducing, it's an easy process. Start by trimming the root and peeling off the exterior. Then grate it on the coarse side of a box grater and pulse it in a food processor with a few tablespoons of white vinegar and season with salt-be prepared for the powerful smell to open up your sinuses. Horseradish roots vary in strength, so taste as you go, you may need to add more vinegar or a couple teaspoons of water depending on the root. The prepared horseradish will keep in the fridge for a couple weeks.

But if you’ve ever seen anybody putting horseshoes on a horse and they have to clean off all the old rotten hoof you don’t wonder why it’s called horseradish. I use a ninja and chop the radish into chunks then plunk it in dry and get to a grated texture then throw in the vinegar after just a couple minutes, hit the button again give a brain smoke sniff test then put in some water to take it to an almost creamy consistency. Anything else destroys the heat….no salt, sugar nothing.

This tutorial seriously lacks both technique and knowledge - two things I always admired from Andrew. First, you do not have to shred the root after skinning it. Just chop it into 1/2" cubes and throw it in the food processor. Then, add 1/2-3/4 cups of WATER. Turn on the processor until the horseradish has a fine consistency. You may have to scrap the sides down 3-5 times. Now - WAIT 15 MINUTES! Then add the vinegar! Most people make their own horseradish because they like it strong. Vinegar STOPS the heat, so unless you like wimpy horseradish, then do as Andrew says and add the vinegar at the beginning. Geesh, never thought I'd be adding something to a Zimmern recipe - especially something as simple as this. Love you anyway, Andrew! Stay safe.

Poor choice of a video on horseradish. A major error in preparation occurs by adding vinegar at the beginning. VINEGAR is added only at the end and after allowing the processed mix to mature for at least two minutes, preferable four minutes or more. The acidic acid (vinegar) stops the aging process immediately. So if it is added at the beginning your horseradish never develops a rich flavor. It's just root and disappointing.
