Mangalore style Anjal Masala Fry is made with fried fish coated with spicy marinade .
INGREDIENTS
Anjal - 300 Gams
Clean the fish thoroughly and pat dry.
FIRST MARINADE
Salt to taste
Turmeric powder
Lemon juice
Apply salt , turmeric powder and lemon juice on both sides and rub them on the fish. Keep it aside for 10 minutes.
SECOND MARINADE
Byadgi chillies - 20 No's
Coriander seeds - 1 tablespoon
Cumin seeds - 1 tablespoon
Ginger - 1 " piece
Garlic - 10 cloves
Tamarind - 1 tablespoon
Curry leaves - few
Black pepper corns - 1 tablespoon
Lemon juice - 1 tablespoon
Soak the byadgi chillies in hot water for 15 minutes. Remove it from the water .
In a blender jar , add all the above ingredients along with water used for soaking chillies, grind it into a smooth paste.
Add 2 tablespoon of the masala paste on both the sides of the fish and keep it aside for at least 30 minutes.
Coconut oil - for frying
Heat a pan , add coconut oil and curry leaves. Add the marinated fish and fry on both sides . Do not overcook the fish.
Remove it from the pan and keep it aside.
To the same pan add coconut oil and add the remaining masala paste and cook until oil separates . Add the fried fish and coat this masala on both the sides of the fish and serve hot.
