You need a very hot oven. We never make it at home. If you have a pizza stone you can use it. It is made from yeast raised dough. Right before baking we dip simit in diluted pekmez solution.

Its an option to use menemen in pastry.. but it ruins everything, oh my Gooood! :( .. btw we can menemen here in Turkey with summer time tomato&pepper for winter time use.. oh my, i cant stand this the pies filled with menemen ayyayyayyyy!
Mild geen paprika doesn't exist in north america. You have to use green pepper. They are very dark green compare to turkish ones. And, domatoes are not tasty. I think , because they are cultivated in greenhouses as green peppers. So, I tried to cook menemen only once in Canada. I never tried again. No sun, no taste.
