Yes, but they are professional. If you fall over or somebody makes you fall, I will bet you will regret that technique. I still do it myself (with a lot of food actually), but it's not really a safe way of cutting something. It's just like driving too fast. You know it's not safe, but you still do it because it feels good or it's more effective. Or you may just be over confident in your abilities.
