Alcohol would evaporate under such high heat so it doesn't matter if you are non alcoholic. The purpose of putting alcohol is to give the chicken a rich taste.

I love that you gave a suggestion on what to replace the white rice wine with, sometimes us muslims want to follow recipes like this but when they use wine or alcohol we don't really know what to replace it with so we avoid the entire recipe altogether
Late comment, but may still be useful: Usually, the cooking wine is used as liquid filler and to make it a bit more potent. Potency is optional, and the liquid part can just be replaced with water. If there's no additional sugar already in the recipe, you can add a bit since some cooking wines are a bit sweet (usually rice wines like sake and mirin)
@@Ezoluna never too late to help someone, thank you! I always thought it's an integral part of a recipe since you see people often use it. So I thought replacing it with anything else would just ruin it
@@gameslacker2711 glad I could help! Note that this mostly applies to asian dishes that use "cooking wine" or sake/mirin specifically. There are a lot of European dishes which use red/white wine as a large part of the dish for flavoring, and in those dishes it's not super optional. But there are plenty of delicious non-wine pasta dishes anyway so not a huge deal.
@@gameslacker2711 also, some people may say that cooking wine is essential and changes the flavor of the dish. I'm an ABC (American born Chinese), and have been eating home cooked Chinese food all my life. I don't notice a huge difference between using cooking wine and not, so it's not likely you'll notice it either. It's delicious either way :)

This is true Chinese cooking. Chinese American food is too complicated. When I tasted in China usually had just a few ingredients, this Chinese chicken with onion and oyster sauce recipe looks very nice. Good job!

Just tried this. I paired it with vegtable lo mein and garlic green beans. I used white wine due to not having cooking wine. I am surprised by the simplicity of it. Super flavorful and tender. Thank you. This is a keeper.

Thhis is one of my house favorites! I learned from a Thai lady I was a Nanny for and have been making it for years with sticky rice and stir fried cabbage. Kids love it!
