Can the mics store presets or do they have to work with the laptop software at all times? I'd love to be able to use these in a live setting (a pair of condensers) without having to haul additional processing equipment. And if it's a modeling mic then why do you even need several mics/designs?

pjmuck no the mic can't save presets. If it could it would cost multiple times more. And there are different models because a small diaphragm mic compared to larger totally different. Antelope has yet to change the two software so each has mic emulation models that make sense for large vs small diaphragm. However, Slate Digital ML-2 let's u switch between dynamic and condenser mode, and has two different emulation collections , 1 for their large diaphragm model and 1 for the small diaphragm.
