What if you build markets right at the start to get a headstart on making traders and then change their home market once its done? Could the eco keep up?

I did remember seeing him repair siege with janissaries in the middle somewhere but I don't really think he has time when things ramp up. I think the switch to making knights out of the military schools is more valuable
