11:14 the question in the video and the question on the notes are different, the video has 1 - sin^2, while the notes have 1 - cos^2.

I watched another video where they used different Pythagorean identities such as, 1+cot^x=csc^2x, tan^2x+1=sec^2x and I’m just confused which one to use or if I need to use both?

depends, say sinxsecx, which can be reduced to sinx(1/cosx), therefore sinxsecx = tanx. don't overthink just memorize the identities and it will come naturally
