Apple Brown Betty | Jacques Pépin Cooking At Home | KQED

Raid the pantry or head over to your local bakery to pick up an assortment of day-old croissants, cookies, bread and buns for Jacques Pépin's low budget interpretation of apple brown betty: a classic dessert recipe that has been kicking around kitchens since the 1800s. Jacques is riffing a bit and adds in a pear and a couple of fortune cookies here. Why not?
What you'll need:
8 - 10 oz leftover pastries, 1 tsp cinnamon, 1/4 cup golden raisins, 1/2 - 3/4 cups brown sugar, 2 tbsp apricot preserves, 3/4 cup orange juice, 1 pear, 1 apple, dollop of sour cream or crème fraiche.

He's such a breath of fresh air. Food shows seem to just try to out do each other with often ridiculous recipes and techniques. And Jacques, in 2 minute segment, is 100% informative and accessible to everyone. And he makes food everyone wants to eat.

I love how this is more of a lesson of techniques rather than a formal recipe and how he uses all the different 'breads' to show that they can all work. No two kitchens are alike, so that's incredibly valuable.

@@everettcousland Yes. But even more important - I remember that all Jacques' cooking shows - he's been cooking professionally since age 14, which is for something around 65 years - have ALWAYS been about instruction and encouragement to the home cook and chefs alike.

It’s like Chopped with a little more deliberation. I love McGuyver cooking. My biggest concern with this is that he didn’t find a stray mushroom in his refrigerator to incorporate. I’ve gotten used to his never ending supply of mushrooms and ability to work them into every dish.

It's so enjoyable to watch a master, with years of experience, do work. Such skill, and no wasted movement. He is the best, and that dish looks superb. Must try it...maybe add a few pecans on top...

I completely agree with you. I’ve been watching Jacque and reading his books since I was a young child and it’s always such a pleasure to watch a master like him work no matter how complicated or simple the dish might be. This Brown Betty recipe is a fantastic idea. I’m definitely going to be making this dessert the next time I have family over. At this point Jacque Pippin isn’t just a master or legend, he’s become a real treasure! Cheers!

Jaques does it again! Who else would see a few pieces of old bread, some cookies and an apple and a pear and be able to turn it into such a masterpiece? I feel like half the time I always have some old fruit and old bread and I just throw it away. Now I know what to do with it!

Don't be silly. (I'm from the South, this is NOT an insult!) He is always happy when he has a glass of wine. And people love him. So they always have a glass of wine to put in his hand. Apricot jam has to be second! Or somewhere after first... y'all can argue over what has second!

Nice and easy. Great way to make something pretty and delicious from scraps. However, I'd go with some whipped cream instead of sour cream.

This man is an absolute genius! I usually just toss out my bread, in fact I was very close to doing that until I saw this video. I think I'll cube up the bread and pulse it a few times in a food processor first. Thanks chef!

@daphne pearce I'm no Jacques Pepein, but never throw away stale bread. There are zillions of great recipes. Look into Panznella Salad next time. It's an Italian classic.

I absolutely love that man! I watch and then watch again his program. One thing though that I find funny...he always puts his bowl so far on the other side of the counter. It looks awkward the way he has to bend way over to put the cuttings in it! But hey....if that's the way Jacques does it, I'm going to do it that way from now on. If he stands on his head with one arm behind his back to cook, that's the way I will do it! 😂

Love how he pairs this with sour cream. I can’t stand when people use ice cream with dishes like this - too much sweetness. Sour cream is our friend.

I see that with some added granola also. Umm. These are the cooking outlooks of many chefs who lived in 30s 40s 50s. They would use seasonal ingredients, readily available. Ingredients, reinvigorated leftovers......

If you've never read Chef Pépin's autobiography The Apprentice, I highly encourage you to do so. It's my favorite non fiction book. His life story is fascinating and he shares some wonderful recipes in it as well. In the first chapters of the book he talks of growing up during World War II in France, and how his mother had to scrounge for food to feed him and his brothers. She never wasted anything--and obviously that had an impact on his cooking. He is a true master of the culinary arts.

Hello Chef Jacques Pépin, I've been gathering apples and refrigerating them to be able to prepare this delicious dessert.I had all the ingredients so I prepared it like you said.When you start to build it up and taste the end result before even placing it inside the oven, it tastes great.I had bread, different kinds of little muffins and pears mixed in juice together with peaches.Waiting forty-five minutes to see the end result.If Jacques Pépin prepared it?.It's got to be good.Thank You and happy New Year.

If you’re too scared to try the coring technique, ive found a teaspoon works great. Stuff it in just like the knife and rotate the same.
