APRICOT SQUARES - Bonita's Kitchen

Welcome to Bonita's Kitchen! Today we will be making APRICOT SQUARES, the crust is so soft and lots of apricot filling. Recipe posted below!
Ingredients for FILLING:
2 dozen, fresh apricots, ( 4 cups frozen or dried or 2 tins, canned )
1 cup, white sugar
1 tsp, lemon zest
1/2 tsp, lemon juice
Method:
Clean and cut apricots in pieces and remove stone.
In a small saucepan, add apricots and sugar start cooking on a low heat until it starts to condense and thicken.
Remove from heat and add lemon zest and lemon, stir and pour over half the crust and place the other half on top of apricots.
Ingredients for CRUST:
2 1/2 cups, sifted flour 1/2 cup to 1 cup, sugar
1/2 cup, butter or margarine 3 tsp, baking powder 1/2 cup, evaporated milk, or milk of choice 1/2 tsp, sea salt
Method:
In a large bowl add butter and sugar mix together until creamy.
Sift in 2 cups flour, leaving 1/2 cup to work the dough, sea salt and baking powder, then slowly fold milk through mixture.
Continue doing this until all combined and start to form into a ball and kneading the dough together, by hand or kitchen aid, if you need more milk you can use a small about.
After your dough is formed into a ball cut in half and start with the first half and roll it out about a 1/4 inch, on a piece of parchment paper or dusting the counter top with flour so the dough don’t stick.
After you finished rolling the dough out flatten in the sides, place the dough on your cookie sheet and spread the filling over the dough and then roll the other piece of dough on a piece of parchment paper the same as the other piece.
When finished place the top layer of dough on filling, 9 x 9 inch cookie sheet.
Pre-heat your oven to 350ºF and bake for 20 minutes or until light golden brown.
Remove from oven and let cool, cut to any size you wish and trim the sides if a little rough. Serve with a cup of tea.
BAKING TIPS:
Let your dough cool in the fridge for 5 to 10 minutes to harden the butter before rolling dough.
Having the filling made the day before or a few hours so it can be totally cold before using.
If fresh apricots are not available use frozen or dried following the same method.

My favorite is apricot pie, when i was a kid , my grandmother always made me a little apricot pie all to myself, i loved it she made me special, you just made my day, it took me back to her kitchen helping her make pies, thank you.

The recipe does look so easy. I might have brushed the upper crust with an egg wash. I like the look of a shiny toasted looking crust. I might even use different fruits to make the squares. But it all looked yummy!!

I was thinking the same thing, maybe a dusting of sugar mixed with a little cinnamon after applying the egg wash. I also wonder what adding some chopped dried apricots to the jam would be like.

@@MelvisVelour Thank you so much for leaving a message, the chopped dried apricots would be lovely in this filling, cook them a little in with the filling to soften them up. I'm thinking a egg wash with a little coarse sugar would be nice but the cinnamon might be a little over powering with the apricot filling. Thank you for stopping by :) Bonita

Anything made with apricots or peaches is my favorite dessert I’m definitely going to make this for myself since no one like this type of dessert except me.👏🏽😋 Edited- in my family my daughter doesn’t like most desserts she’s very picky and I am not I’m a foodie always have been. 😋

gracelandone I meant in my family im the only one who likes this type of dessert - I’m a single mom my daughter and I have completely different tastes that’s what I meant I’m aware of how popular this dessert is because I too love it.

I did make these with reconstituted dried apricots and the crust is so delicious. Everyone raved about them. Your recipes are always superb. You are my favorite RU-vid cook.

My 1/2 recipe - using frozen mango chunks -made 14 wonderful squares, not too sweet, soft chew. Two never made it into the foil pan for storage - lol A 1# bag of frozen fruit was the perfect size for the 1/2 recipe. Definitely a winner and I'll gladly be trying other fruit flavors.

Hi Bonita, my husband found your youtube channel today and I was thrilled to see traditional Newfoundland recipes that I remember my Mother cooking for us as a young girl. Do you happen to have a recipe for onion pudding? I remember my Mother use to make it so many years ago and I have not been able to find the recipe since. Thank you for the wonderful recipes. Going to start tomorrow to cook some for my husband.

We have a version of these in the States made with apricot jam. ( You need to add a “this is as good as it gets” tee to your merchandise line)

Thanks Bonita, was looking for this recipe, my mom used to make these. If you used dried apricots would you add any liquid? I guess you could use the same crust for raisin squares. Thks you are the best.

You would need to soak the apricots in water overnight and cut them up so they can rehydrate then cook with the sugar. They would need to cook longer to soften, the canned apricots are already part cooked.

Thank you Garry, I just seen your message and thank you for stopping by. If you used dried apricot they will still taste lovely and yes you will need to add a small amount of water. Cook them on a low heat and a little longer to rehydrate then cook with sugar, then follow the method on our recipe for the rest. Enjoy Bonita

Use apritot jam right from the jar without cooking. In a way she is making apricot jam for the filling.
