Ingredients
----------------------------------
- 2kg mutton
- Ghee 1/2 cup (around 125gm)
- Black cardamom 3nos
- Green cardamom 7nos
- Cinnamon sticks 2nos
- Pepper corns 20nos
- Bay leaves 3nos
- Cloves 10nos
- Onion chopped 2 medium
- Ginger and garlic paste 2 tbsp
- Hot water 3 liters
- Salt to taste
Chicken fat mixture
-------------------------------
- Mutton stock 1/2
- Pinch saffron (soaked before 10 mins)
- Lemon juice 1 tbsp
- Red food colour
- Mix it well and brush it
- Heat oven 200° grilled for 15-20 mins
For Rice Cook
-------------------------------
-Basmati rice 4.5 cups (Soaked before 30 mins)
- Green chilli 6nos
- Soaked saffron with broth
- Red food colour pinch
- Heat charcoal
For Mutton Smoked
-----------------------------------
- Heat charcoal
- Pinch oil
- Aluminium foil
For Garnish
---------------------
- Fried cashew nuts
- Fried pine nuts
