Lately Morel mushrooms have come under fire in the press for being potentially dangerous or even deadly following an incident at a restaurant last April where 47 people fell ill after eating undercooked morels and unfortunately 2 people died. In this episode we expose the dangers of Morel mushrooms and their look alikes, we talk to experts and the owner of the restaurant, and we learn more about this curious and rare case, as well as other morel poisoning cases.

Fungi contains a molecule known as chitin that is the same thing that makes the exoskeleton of shellfish so hard, and cannot be broken down by the human digestive system, so it is another good reason to thoroughly cook mushrooms. All the ideas expressed in the comments should be taken with a large grain of salt. I don’t think there is any other field of study or science that has more misinformation being shared so freely and boldly. Mushroom Wonderland and Aaron himself have no opinion and neither encourage nor discourage the use of mushrooms containing mind-altering compounds. These mushrooms contain powerful chemicals and should be treated with a high level of responsibility. I agree I had no idea that there was any sort of toxin in Morels and have always learned that they were safe to eat! But I also follow the rule of thumb with any wild mushrooms, any wild mushroom should be cooked before consuming. It's a good rule of thumb, no identification check before cooking or distributing. You can even do some UV blacklight test some toxins and bacteria and other mold that are dangerous will glow different colors in the black might might not I don't know food for thought.!

Some of the storey speaks to mitigating health risks by always cooking wild mushrooms before eating them and if the shroom is new to you eat a small portion and see how your body responds.

I was trained by Paul Stamets in 2006. He stated then, has stated in all of his book prior and since that ALL MUSHROOMS SGOULD BE COOKED BEFORE CONSUMPTION. Even thos button mushies you put on your salad should have been cooked. How does one become a chef and not know this? How does one make a living off an organization based around Fungus NOT KNOW THIS?

I once had a patient who came into the emergency room. I believe she was picking zellers bolete, and she said she has eaten them her whole life. But on this particular day about 3-4 hours after ingestion she felt off and about 7 hours after ingestion she went into the emergency room for complaints of fatigue, malaise, and nausea. This is the second time im hearing of prolonged shroom digestion with complications, of course the patient could've also picked incorrectly and ate a toxic mushroom we dont know that much. But still interesting to hear that some people claim to have eaten mushrooms for years only to be sickened by them after some time. Never had any issues but I also do cook them well and also fortunate not dealing with the Morchella Syndrom. But still gotta be careful I guess. Thank you for this educational video, very important to make people aware.

If it's a newly acquired allergy, the person's initial exposure symptoms may be masked from allergy medication. And if they've not taken allergy/asthma medication before their next exposure their sudden severe reaction can be a total surprise to them. Possibly deadly surprise.

As with any mushroom the first time you eat a new variety follow common cooking instructions and eat a small amount the first couple of times you consume them. If you find yourself with a upset stomach do not eat them again.

I have harvested and eaten tons of morales in my life and have never had any problems. I've fed them to numerous people. I've even sold them to restaurants in Oregon have never had any problems wild morel mushrooms in Oregon have never made anybody sick that I have knowledg of ! I wonder if this is an isolated incident as to the males making people sick originated in the Himalayas in China and we're not locally native!

@@mushroomwonderland1 I'm curious as maybe one of these mushrooms wasn't a true morale and could have poisoned the whole batch possibly. I have seen numerous false males growing in central Oregon in the cascades. I've even found some here in California where I live now. I know they're super toxic, one weekend camping up Crane Prairie reservoir in Central Oregon. My dog came severely ill was shaking. Nervous wouldn't come out of the tent and wedded herself. I knew this had to be Ison of something. I assume she might've ate a false morale that they were growing all over the reservoir. I went to the store as soon as I could in the morning when it opened got some creamer and milk to help settle the stomach and everything turned out fine. Normal the next day still scary incident.!

Isn't it possible that the mushrooms foraged in the Peter Dayton case were simply mushrooms that cultivated a strong case of the killer chemical mentioned to make them poisonous? Much like when grapes are grown in soils which make them sweeter vs grapes grown in soils that make them more sour. I'm guessing the soil and it's contents have everything to with this problem. Another example, if the mushrooms were burn mushrooms, what if those mushrooms were cleaning up a site where toxic plastic had burned in that spot? Maybe it was still contaminated, and the mushrooms were simply cleaning up the soil? I have a lot of Japanese Ligustrum growing in my yard that I'm trying to clean up. It's highly invasive. Even worse, the leaves make their own glyphosate (the chemical in Round-Up). Researchers have proven there's glyphosate in the leaves, but I'm yet to find studies that have tested the wood, or the roots. After watching how a small grove of ligustrum wipes out everything else around it, I'm convinced there's also glyphosate in the roots. All that to say, when I cut down the large wooden trunks of these Ligustrum, false Turkey Tail has been jumping in to help clean up these trees. It could easily have the good Turkey Tail growing on it. But knowing the plant's history with making its own glyphosate, I will never harvest ANY Turkey Tail, or any other mushroom from this plant. So wherever those offending killer mushrooms are growing, I'm thinking that probably has EVERYTHING to do with the toxins found in them.

Too many other variables involved to pin that one death on the morels. Where did they source the water? What other ingredients were in the dish? Did he accidentally have a misidentified mushroom mixed in? What else did they eat that day?

Curious to see how this case turns out. Each year we meet more hunters in the woods who are hunting them to sell to the restaurant's. Some explain how they are taking weeks off from work to focus on following the season north and selling to restaurants along the way. Who knows, the outcome of this case might affect that. Regarding what Dr Beug said, I'll admit my stomach's gotten more sensitive in over 50 years of eating them but if I die from morels, folks will be laughing at my funeral and that's a good thing.

Thank you very much for this info. I have a lot of allergies and only recently started taking an interest in mushrooms so I had no clue. I'm glad to know this is something to be alert to. The Zoe Science and Nutrition podcast encourages adding mushrooms to your diet but they don't give enough information imo.

Thanks for sharing this information with us, Aaron. Morels are my favorite mushroom. I have always cooked them thoroughly and fortunately have never experienced any adverse effects from eating morels. So sad that people became sick and some even died from eating raw morels. I will share this information with my family and friends so that they are always well aware that they must thoroughly cook morels.

I almost cried when the music was cut. However, your beautiful intro has a way of instantly putting me into a blissful coma. Seriously, your content is great! I'm stuck on the Chicken of the Woods Episode. I see 1000s of people get excited about finding COW (mainly on all the reddit groups) so I figured there must be something good regarding edibility. Is it possible you found a batch that took up some bad tasting components ? Btw, I 💯% know you are VERY well studied. Do you know people that enjoy eating them ? Or have you tried so many edibles (many not well known to generalists) that COW doesn't meet your criteria? Or is it simply your taste buds? 😂 I totally realize this is the least scientific paragraph I've ever produced. Thanks 😊

To tell the truth the handful of times I've eaten it It came from the Conifer loving species of the Pacific Northwest, I've never had the true Laetiporus sulfureus that grows in most of the rest of the country on hardwood. Perhaps that's the difference. But the few times I've eaten them I have found them disgusting. My wife agrees. When they're young and fresh like some sort of a irony chemical to me. But when they're older and dried out they at least can soak up some teriyaki sauce or something and they're okay I guess except for that they're dry as sawdust. I really wish I could report that they were delicious but not my experience.

@@timbow1356 definitely! The chicken of the woods is another mushroom that is responsible for a lot of people who show up claiming poisoning in the hospital. That one should be cooked well also, for those who care to indulge.

They taste like wood with "chicken" flavour. Better to let them grow and enjoy their beauty and just take a tiny piece to try or add to dishes.. The older and dryer chicken of the woods can be fried with spices/garlic and then put into jars leave them for a year and they will be soft too. (make sure to put them in the jars when the oil is still piping hot watching your jars don't break when they get in contact with the hot oil so make sure they are already a bit warm follow standard jam or canning test make sure to heat it again to kill off po botulism.

You have always warned people to always thoroughly cook all mushrooms and to only eat a very small portion each time you try a new species. You also give the tip to only introduce one new species at a time. So, thank you for always doing your best to keep foagers of all levels safe. Great video and thanks as always for the great information. We mushroom in NW Oregon. I was taught to always cook wild mushrooms. I've seen recipes for using king/queen bolete raw, but not something I wanted to take a chance on. I would never eat raw morels, much less serve them to someone else raw. I've heard they can be somewhat tummy upsetting if not cooked. Some people are more sensitive to morels anyways, and consuming them with alcohol can be a trigger, even when they are cooked. My mother is sensitive to chanterelles. We collect them by the basket full here in the fall, but she can only eat a little at a time, otherwise she gets an upset tummy.

Honestly if you are a restaurant owner and you are going to serve any kind of mushroom you better be damn sure you know how to safely prepare them. I’d say it counts as criminal negligence, you have a responsibility to serve safe food.

Some species of Verpa family e.g. V. bohemica and V. conica are potentially toxic if consumed raw as well. Gyrromitra esculetna or G. gigas are well known to be toxic (containing gyromitrin) and need serious thermal treatment before consuming.

Hi Aaron good story, a couple additional things. First Mr Parker is a defendant in a negligent death lawsuit, and therefore not an unbiased witness. Montana DPHHS did cite Dave's sushi for multiple violations (only after) and if I were you I'd insist on talking to the chef involved, unless he's out of the country somewhere.. stirring up controversy about morel toxicity when trained chefs, produce handlers and authorities have all agreed they should not be eaten raw for decades, is just a red herring used to distract us from the serious negligence this incident exposed

Yikes. Wow. I had dried morels from Tops before and was ok, so I think I'll be ok if I find them ... have yet to find them ... I mostly see Chicken, Old Man, Chanterelle, and Hedgehog, and Lung Oyster in my area (NW PA). Still though if I find em again I wanna just try a few at first ... double check ... because who knows, sensitivity could vary by sub-species too. That's neat that the guy who taught Stamets is still around though - the grandmaster mushroom guy ... Ima look into him.

I've had a similar incident with matsutake mushrooms I've eaten them many times but the last three times I've eaten them I've gotten sick so I've decided I'm not going to eat them anymore

You'll need things to do sterile technique to have great success. A laminar flow hood, a pressure cooker, rubber gloves, and alcohol burner, just some of the things required to have consistent success at cultivation. There's a ton of resources online and in print about it. I don't talk too much about mushroom cultivation here on the channel but I feel like I should.

I ate ink caps in small dose to test they were good and tasty so then a few days later ate a bunch but drank alcohol with them because I didn't know they can't be mixed and they made me really really sick. Makes me wonder if it could be a component like this where in a restaurant something else combined to make a toxin?

Just saw an article that was written about a vineyard owner with the location and name of the vineyard and it was talking about how people need to stay off their property and stop picking the “deadly” morels that pop up all over their property lmao if that’s what they wanted I’ll bet that’s not what’s going to happen.

I will probably doubly make sure I cooked my morels well done and if I start feeling ill from eating them at any point in my life I will likely discontinue eating them.

Tried some honey mushrooms for first time last season and only ate 2 tiny caps (way overcooked to be safe). For the next month i had severe stomach cramps everytime i ate. Cant say for sure thats what caused it but wild mushrooms need to be respected. Always cook them and try a very small amount to see how your body reacts. Maybe even be aware of surrounding plants, trees, and area your harvesting from in case mushrooms absorb toxins from host/environment.

I was wondering if there was a connection between eating old morels and these poisonings. If they are being shipped from china they may have started to grow a new fungus which is sickening people. Also in the Peter Dayton case he was eating dried morels he found two years previously. Being that the morel is especially wet (or very moist) when fresh it seems at least plausible that it may grow a new fungus when stored too long, or not eaten fresh.

Yeah that's a valid thought but I guess they tested for everything, including listeria which is the most common bacterial contaminant. Also, mushrooms from that same shipment were sent off to at least 11 other restaurants with no reports of illness.

Hey bud, this video got me thinking. Have you done a field to table video on proper cooking & picking of morels? Seen plenty of you picking them but only recently cooking mushrooms. You should do a safety cooking video on a variety of mushrooms. Or for more content, a safety video on each one as their season approaches.

Asking Aaron Parker if eating at his restaurant (that killed two people with their culinary negligence) is like asking the barber if you need a haircut. Good job if you’re trying ta slim down the competition on foraging 😊Yes. Of course you shouldn’t eat morels raw. Some experts I spoke to when discussing this particular event, referred to the “ cook it like its raw chicken” method. What moron eats sushi in Montana at a place called Dave’s? Aaron Parker may never eat another morel, but how many people say the same thing about eating at Daves sushi?

I damn started learning last year yet there are so many that I can’t identify. So I payed 9.99 for an app to help me identify. Trash app Dude. Absolute garbage. Not one picture that I’ve taken has been matched. Don’t F-ing buy that unless you want to be ripped off.

Sorry, but that is no excuse for the restaurant owner to use. He should have done his due diligence. You should be aware of the risks and repercussions of serving every item on your menu. If you don't know about something that you want to put on your menu, you should do the research before you feed it to people
