This made me hungry, I might go to my butcher now and start the fire for tonight 😅 Quick tip here... when cooking Argentinean style, try to avoid the flame if you are using a grill. We cook asado in two different ways here; one with fire and a cross (you put whatever meat you want to cook in the cross and set it close to the fire), we call this technique "a la llama" in case somebody wants to look at it; and the other method is simply lightning up the charcoal and once it is red and without fire, you just distribute it under the grill. This allows you to add or remove as much charcoal as you want and slowly cook the meat. If you are cooking some ribs, for example, it will take you around 2 hours: bone side down for about an hour and a half, and then flip it to cook it for around 30 more minutes on the meat side

I have really enjoyed you both and Mitch cook with the different bbqs. I made a what the yanks call an ugly drum smoker but also bought a kettle bbq. S I have a Webber kettle lid three racks to cook on. A basket in the bottom for low and slow. The bottom of the kettle fits on the lowest rack position so I can direct heat with two rack positions. And I can fit another barrel top with a rotisserie and the Webber lid fits perfect. I’m not sure how to improve it. Lol best thing I made in a long time. The rotisserie is just fab adding so much flavour. Keep it up.
