He could have used wooden crepe tool. Bare hands dirty , touching dirty scarves, touching food. Leftover batter he puts in bowl then places under shelf. Is he going to use it for next one even though it was heating up on round grill pan ?
I think he is an awesome chef. He would make thousands in a 1st country where people LOVE authentic dishes. He is very skilled at creating ART in cooking.

I will tell you the secret of batter it is just besan nothing else believe me , althought you can add anything in batter to have your secret recipe , now coming to point you need to stuffs water and besan(raw gram flour) and water should be be added in limited quantity (the magic come from water ) if you add too much water the it will be a mesh. , Only add small amount of water so that it start to get runny , now the pan it should be well greased or seasoned pan so not put oil too much as you will not be able to rotate the batter on pan , always remmber when making these type of dish your flame should be low , once you have spread batter on pan let it evaporate the excess water and once it dried somewhat add oil to the side and in middle , Believe me it will automatically start peeling slowly or once you dryness you can use flaten spatula also always remeber flame should be low to medium once you are expert in making you can do changes accordingly, also you may seems this lengthy essay although making this only takes 5 to 10 minutes, it is a quick breakfast
It's a combination of split black gram (skinless) also known as "white urad dal" & split green gram (skinless) also known as "yellow moong dal". The yellow & white lentils are soaked in a ratio of 60:40 respectively or 70:30 (the yellow lentil is always more in qty here, the white lentil plays a role of giving the crepe a softer texture), the two are soaked in water for nearly 5 hours. after 5 hours leaving some water in the dal the excess is drained it is then ground to a coarse paste alongwith some salt and Voila! ready to use :)
