Soak the grains-lentils, chickpeas, barley, and rice-for a few hours, or pre-cook them if you prefer.
While the grains are cooking, wash and chop the greens, such as spinach, parsley, and leeks.
Add the chopped greens to the pot and cook everything together.
Fry onions and garlic, then add dried mint to the oil and fry for a short time. Add this mixture to the pot.
Let the soup simmer for another hour.
Add kashk (curd) to the soup, and enjoy!
