🇺🇿 SUMALAK: Place seeds on a 1m2 table, it takes 3-4 days for the seed to sprout. Water 4 times per day. Cut or break the carpet of wheat into smaller pieces and place it into a bowl. Grind the wheat sprout into a machine. Pour water in the bowl of the grinded wheat and leave it for 15-20 minutes. Use a cheesecloth to squeeze the juices out. Place mud around the khazan to keep the heat and start the fire. Pour cotton seed oil in the Khazan and put in some river stones. Pour the juices through a sift to make it smoother. Sift the wheat flour then add it into the wheat juice and cook for 10-12h hours. After 10 hours of cooking, put out the fire and cover with cloth.

It's so interesting to me how different countries can have such similarities in very specific dishes. There's a verrrry similar dish in Iran as well called "Sámánu" also made near nowruz or the persian new year. It has be stirred for more than 10 hours, and its made with almonds and wheat flour. I love how this channel shows how us as ppl can be different and yet have so much in common.

“sumalak” reminds me of an Indonesian/Malay sweet called “dodol”. it has the same brown colour, but it's dense like toffee and made out of coconut milk and palm sugar instead. the cooking process is also very similar, with the huge wok and constant stirring; it takes hours and so much labour. people here usually make dodol to celebrate Idul Fitri holiday. i think it's always interesting to find something similar from two different cultures.

We call that matamis na bao. We use brown sugar or coconut sugar for the sweetener. A special version I like has pili nuts in it.

That brings so many memories. I remember my uncle would put dodol in banana leaves and I'd eat them fresh. Very sweet and sticky, but the taste is so unique.

As Uzbek guy i can add few facts about Sumalak. 1. People mostly cook that dishes in their houses if they have yard for sure. 2. You can buy that dish at supermarket (prices are pretty fair for that hard work) The next facts would be just my opinion and recommendations :) 1. Try to taste sumalak after holding it in refrigerator . It gets more thick and tasty 2. Try to find as thick sumalak as you can. I love how people gathered together to share the food. It's life "fiesta" here in the Philippines where we go house to house to have a taste of our neighbor's cooking. This tradition should continue for generations to come.

I'm not Uzbek, I'm Bonsian but those stirring ladies remind me of my grandma that lives back home in Bosnia, and I miss her very much. Please do a video in Bosnia! There's so much different foods and styles that you can literally go from town to town and the food will be completely different!

I was in Kazakhstan twice during college in a remote village and it was wonderful to see people so close, yet still so different village to village! The work ethic is true to what was seen here. No complaining, just coming together like it's just expected and what you do! Bless you for showing Uzbecks sharing this wonderful once year event!

Two notes about sumalak: (1) The growing seeds produce a set of enzymes (amylases) that can break starch into glucose. By leaving the pot over the night, they are giving time to the enzymes to work on the starches in the wheat flour and produce sugar = sweet. The exact same process is at work in producing beer, except, in beer making, there are yeasts converting the glucose into ethanol. The long boiling of sumalak has the added benefit of killing any organism that can spoil it and make alcohol or acid. Sumalak, like malt extract, is a great source of B vitamins. (2) Iranians have the same Nowruz desert, cooked very similarly, and only for the Nowruz. The only difference is it's not given away for free. It's sold. In Persian we call it Samanu ("a" sounding as the "a" in "hat").

Newroz is a new year festival that originated in the Zagros mountains and nowadays as a Kurd who celebrated Newroz thousands of years ago for the 1st time, I am glad it has been celebrated by people far far away from Kurdistan and Zagros. Even that delicious dessert is called Semenu in Kurdish but it seems that one is all over the place and many people from different backgrounds also cook it. I love seeing people having common values. This was so beautiful. Those ladies were so sweet and tough. It reminds of me the old school sugarshacks we have dotted around Quebec. Only instead of sprouting seeds, we tap maple trees; Rather than stirring a pot of starchy water into a creamy caramel, we boil the sap down to syrup... It's amazing how cultures a world apart, in Uzbekistan and Northeastern America can be so similar. Here we revere pork like the Uzbeks revere their Karda-sheep-ian

Navruz or Norouz, meaning “ new day” is the celebration of the begining of the year and spring. This “ Persian in origin “ celebration is observed in many countries. It is not a harvest celebration.

That deep color probably comes from caramelisation of the sugar of the grains. Sprouting the grains releases enzymes that help break down starch into sugars. It's well known within bread bakers or brewers. But sugar caramelises at temperatures above 100 degrees celsius, which is why most of it is probably caramelised at the bottom in direct contact with the pan. And slowly, as the water content decreases, the boiling temperature raises until more sugar can start to caramelise. Very cool to see!

So basically the long cooking of the flour and wheat starch leads to a hydrolysis of starch into oligosaccharides and disaccharides, hence the sweetness and caramelizing color change.

INGREDIENTS 1 pkg pizza dough (Tiseo, Delallo, Trader Joe’s, any kind you like) 8 oz. shredded mozzarella cheese 6 oz. grated romano cheese 2 Tbsp butter 2 Tbsp olive oil 2 cloves garlic, grated DIRECTIONS Preheat oven to 350 degrees. If you’re using frozen dough, let it thaw and rise a little. If you’re making Delallo or any other store-bought dough, let it rise a bit before using. Add the olive oil to a casserole dish to grease it and then add your dough to the dish. And spread out evenly as best you can to make sure it’s taking up the whole dish (the olive oil with make this a little tricky, but take your time). With the tips of your fingers, gently press down (like you’re typing) on top of the dough, just enough to make cute little divots into the dough. Melt the 2 Tbsp butter and the grated garlic in a small dish, then brush evenly on top of the dough. Top with Mozzarella, all the way to the edges of the dish, evenly. Then do the same with the Romano cheese. Bake for 30 minutes and then check to make sure it’s golden brown. Turn the oven on broil and broil for ONE MINUTE - no more than one minute or you’ll burn your cheese and cry into a casserole dish, wondering what might have been. Once the minute of broiling is done, it will be golden brown with a few bubbles on top. Please dip into marinara or, even better, ranch dressing to enjoy. Fact: stone actually have 10% minerals salt, everyone remember goat mountain search salt from mountain rock, ordinary rock also have salt but quantity salt actually pretty small especially river rock.

Uzbeks are very chill people. I love them.They have a nice sense of humor,very laid back, balanced emotionally.Very comfortable to be around them. Very clean and have an amazing cuisine.

When I first saw the wheat sprouts, I genuinely though they were making something similar to Coliva (a Romanian sweet dish that we give out at a burial or when we do a "pomana", which is a kind of remembrance of a deceased relative). And also, as a fun fact... it seems Romanian and Uzbek people have the same word for cauldron: Cazan :D

wow it almost like "Dodol" in Indonesia instead we using coconut milk and brown sugar because is typical sweet dessert that use for ceremony like wedding or else. but the cook is almost same it took a long time to mix and mix and shouldn't burnt inside until it more thicker than this. absolutely good dishes there and the people there.

Navruz is actually central asia new yers eve. People from this region were historically nomands, and they were selebrating the new year when spring came, when nature became alive again and the winter was over. As someone who was growing up in Kazakhstan I remeber how we selebrated the Navruz too, but in march :)
