I made cold soba noodle with creamy walnut dipping sauce.
This sauce has been eaten in the specific area where is inland and mountainous like Nagano.

By the way, what is Mentsuyu which I added in the dipping sauce?
Mentsuyu literally means sauce for noodles, so we use as dipping sauce or broth for noodle in Japan not only soba but also udon and somen. It's not normally for ramen though because ramen is originally from China.
We love Mentsuyu a lot, because it's so versatile from dressing for salad to braising meat and fish.
Mentsuyu contains soy sauce, mirin and dashi broth which has dried bonito and kelp. It's salty and slightly sweet sauce with strong umami.
Hope you can find one in Asian super market.
INGREDIENTS (2 ~3 servings)
soba noodles
60g (2 oz)walnuts
1 Tbsp miso
1 Tbsp sesame paste or tahini
1 Tbsp toasted sesame seeds
1/2 Tbsp sugar (optional)
2 Tbsp mentsuyu*
6 Tbsp~8 Tbsp water *you need to do taste test to get your spot.
This sauce can be stored for a week or so if you mix without water. You can use this as the dressing for boiled spinach or carrots. If you add smashed tofu in this sauce, it goes so well with toasted mochi, too.
