I know you meant this with great intentions but I just thought I should reply. I'm anemic and vegan. Iron supplements exist. And even meat eaters that are anemic are advised to take supplements. Research has shown that an increase in meat consumption to increase your iron levels also puts you at a higher risk of developing chronic diseases like cardiovascular diseases. There's so much more to this too. Please educate yourself about this before making baseless claims. And beans aren't the only source of protein that people can consume on a plant-based diet. But overall, the main point of her comment as others have already mentioned is that she feels sad about how he doesn't support her and not that she's upset that he isn't vegan.
