• TURMERIC POWDER (1/2 TSP)
• CORIANDER POWDER (2 TSP)
• BIRYANI MASALA (1.5 TBSP)
• BRISTA OIL (4 TBSP)
• CURD (3/4 Cup)
• MINT LEAVES (CHOPPED)
• FRESH CORIANDER LEAVES (CHOPPED)
• GHEE (2 TBSP)
Rice Cooking
• BAY LEAF (1 NOS)
• CINNAMON (1 INCH)
• CARAWAY SEEDS (1 TSP)
• GREEN CARDAMOM (3 NOS)
• CLOVES (4 NOS.)
• STAR ANISE (1 NOS)
• BLACK PEPPERCORNS (3 NOS)
• GREEN CHILLI (1 NOS)
• LEMON JUICE

• BASMATI RICE (500 gms (WASHED & SOAKED FOR 30 Mins)
Layering & dum cooking

• MILK + SAFFRON MIXTURE/JHOL
2. Vada Pav
. For Vada
- Boiled Potato (3 Large Sized)
- Ginger Garlic Chilli Paste (1.5 TBSP)
- Oil (2 TBSP)
- Mustard Seeds/Rai (1.5 TSP)
- Cumin Seeds (1 TSP)
- Asafoetida (3/4 TSP)
- Curry Leaves
- Kashmiri Red Chilli Powder (1 TSP)
- Turmeric Powder (1 TSP)
- Salt to Taste
- Peanuts (3-4 TBSP)
- Coriander Leaves (chopped)
- Lemon Juice (1/2 Nos)
. For Thecha/Green Chutney
- Coriander Leaves (1 Cup)
- Garlic (8-10 Pods)
- Ginger (1 inch)
- Green Chillies (as required)
- Salt to taste
- Ice
- Grind it to fine paste
. For Sukha Chutney
- Oil (1 TBSP)
- Garlic (10 - 12 Pods)
- Peanuts (2-3 TBSP)
- Sesame Seeds (1-1.5 TBSP)
- Khopra/Dried Coconut (1 Cup or 1 Small Sized)
- Spicy Red Chilli Powder (2-3 TBSP or as preferred)
- Salt to Taste
- Grind it to semi fine powder
