Freezing it and keeping it for a longer period of time makes it unusable for sashimi. You eat it fresh and raw. Not first frozen.

Im surprised at the amount of people who dont know what sashimi is.. Im very lucky to live in Bali where I have lots of international cuisines, and Im very familiar with raw salmon. As long as its sushi grade, its perfectly fine to eat raw. And its delicious!
