I'm from Assam, Jamie and I can't tell you how incredibly happy it makes me to see you cooking with something from my region. I drink Assam tea 3x a day and it's unbelievably tasty! Love you. COME VISIT ASSAM. I can promise you that it's much more beautiful than the tea.
WannaPlayQuidditch i am from Kerala,but i am bit skeptikal about the way he cooks, trust me i don't know how to cook duck in Assami style,but i know one thing no where in India we use oven for cooking for traditional recipes.
B ma It ain't an Assamese style duck recipe. Jamie cooked crispy skin duck using Assam tea. I am an Assamese, and I loved Jamie's take on Asom's tea to make such a delicious dish.

Hey Jamie! I thought I would share my recipe for Orange Wood Smoked Duck! I made it last week for an employee luncheon at my job, needless to say it was brilliant. I marinaded it in a spice blend for poultry I developed. 1 bag of brown sugar 2tsp sea salt 2tsp garlic salt 2tsp chef seasoning salt 2tsp garlic powder 2tsp onion powder 2tsp oregano 2tsp marjoram 2tsp thyme 2tsp smoked paprika 2tsp Hungarian paprika 2tsp tarragon 2tsp poultry rub 1tsp cayenne pepper Score the duck just as you did, blend all these spices together and rub it into the duck, let it sit covered in the fridge for 1 hour, make sure to soak your wood chips or chunks for a few hours before smoking. Depending on your choice of smoker, be it electric, charcoal, etc. mine cooked in about 6 hours or so for two 5-1/4lb ducks.

FoodTube is amazing. Before FoodTube I did not cook. I could make an omelet, or cook pasta, etc. ... Now I've cooked 5-10 different dishes maybe a 100 times already. I love it. Well, the veggies in the 2nd inning are a kind of a rack. But if you don't have a trustworthy oven thermometer and/or a very trustworthy oven, mistakes will be made. You'll either burn it or it'll be way underdone. Or half and half. Meat thermometers can save you. Inside temperatur of 180 to 185 fahrenheit, 82 to 85 c, is ideal. Of course , underdone breast meat 'magret' is sometimes sliced and served at the table and will go through some people (like me) faster than a greased goose turd. I'd bring it to the table, slice it, and cook it through on one of those hot stone tabletop grills that you sometimes see. Wish I had one of those- when they put that on your table, even at a greasy spoon joint, your wallet will be a lot lighter when you leave! And if they drag out the duck press, take out a new mortgage on whatever you own, and pawn your saxophone, ha ha ha! Good luck with your duck.

Hello to my favorite chef Jamie! I have been made hundreds of your recipes and all of them are gorgeous. You are inspiring me a lot. As I am living in Greece I go fishing all the time and my favorite recipe with tea and especially Greek mountain tea which has a very special taste is the following: I call it Marinated "Bream with lemon and tea" bream fillets 800 g. virgin olive oil: 400ml lemon juice: 150ml freshly squeezed Mountain tea: 50 g. Water: 100ml Salt: 1/2 teaspoon pepper 1/4 teaspoon parsley and pepper Florina: chopped, for decoration In a small saucepan pour the water and just boil add the tea. Reduce heat and cook for 4 '. Strain the broth and leave aside to cool. Once ready, stir it with olive oil, lemon, salt and pepper and pour into a shallow dish. Pour into the container containing the marinated fillets of sea bream. Leave them out of the fridge in a cool place for 1 hour, agitating them at regular intervals. Drain the fillets from the marinade, cook on the grill grill for 2'-3 'on each side and serve in 4 dishes. Decorated with parsley and Florina pepper (red) and sprinkle with a few drops of olive oil. Maybe you can upgrade this receive according to your taste, but if you can find open water breams is really fantastic!
Assam tea is recognized as the best tea in the world. We assamese people like tea very much. Here in Assam tea is not used to prepare duck. We prepare duck with white gourd. Try it. Very tasty. But if I get a chance I would like to have duck prepared with your recipe. Jamie, your presentation is heart touching. Keep it up. With love... from assam...

we've made the meat and gravy as in recipe, but added an orange halves and made it as Sunday roast with potatoes etc. the taste is amazing! really good recipe, thank you!

I once had a nice recipe for Earl Grey cookies, which were great. Also, just alike to tea, i like to use instant coffee powder in creamy sauces, to let the bitterness of the coffee counter the sweetness of the cream

I've been watching your Christmas cooking shows on Britbox. I cook 2 duck's every thanksgiving or Christmas... This year I decided to try your recipe for Duck from your Christmas family and friends cooking show... For the first time I cooked it at 375 for 2 hours, with the orange sauce and it came out DELICIOUS!! I will forever cook my ducks at 375 for 2 hours....
