In this episode of Barry tries, we are taking on the super viral TikTok 2 ingredient 'flour chicken' recipe - essentially a seitan made out of just water and flour! There were lots of variations of this recipe so I decided to attempt the super basic 2 ingredient one, but then enhance it a couple of ways, ultimately resulting in a gourmet vegan 'flour chicken' burger for my Daughter Phoebe - a really fun challenge that takes a little time, but is definately cool to try!

Btw, you could put the washing water to the side and let the starch settle, so you can use it to … I don't know, thicken sauces.

I’m pretty sure that after the seitan has been boiled, it then supposed to be cooked in another way, it isn’t supposed to be eaten plain, at that point it’s meant to be treated the same way as you would raw meat.

Yep. The entire time that they were criticizing the seitan's lack of flavor, I just keep thinking about how bland chicken is if they had cooked it the same way

@@GyroCannon that was my exact thought too. It’s been a very long time since I ate meat but I don’t remember it having very much flavour by itself, I’m sure what makes it enjoyable is the way in which it’s prepared and not just barely cooked and unseasoned morsels.

I've found the longer you knead it the first go, like really until it is so stiff you can't even knead it anymore, the better the gluten develops and the more seitan you get from the flour. And nutritional yeast + soy sauce kneaded into the seitan adds a lot of savory flavor.

“It’s bearable but flavourless” I mean this is similar to people who take a bite out of raw tofu / unseasoned soggy boiled veg - you’re not going to have a good time having unseasoned food Ingredient recommendations for experimenting with enhancing your seitan flavour: vital wheat gluten and nutritional yeast/nooch (can get at Holland and barret), liquid smoke (online or in large Tesco’s) and you can get interesting different flavoured stock cubes such as mushroom / garlic / or even sriracha flavoured

This looks like a staple of many chinese vegetarian recipes the process of washing is called 洗面筋 (literally: washing gluten) there are quite a few chinese vegetarian dishes that use this as a meat substitute

Nutritional yeast is actually really a good addition, because it’s rich in B vitamins, like meat.

Braiding is easy, in future just remember it's always swapping into the middle from alternate sides with the outside on top(also works with the outside on the bottom since it's just a braid rotated 180°, but everyone does on top so for the sake of consistency stick to on top).

A lot of food videos on TicTok and RU-vid (those that just play background music and never eat what they make) are faked just for the viewing figures at leat with your channel you never fake anything and actually eat the stuff you make... well done

I don't use Tik Tok because of all the privacy concerns and the Chinese gov stealing peoples data/ spying via your phone or pc camera and its also been proven Tik Tok also saves your contacts/ photos/ bank details etc .....scary stuff! Although, no social media is completely safe but Tik Tok is one of the worst. Plus I just think its pointless and unsafe for kids. 🫤

this reminds me of when I was really little, my grandma would teach me how to make paste out of flour and water. and when she wasn't looking, i would eat a little piece(idk why but i just rem doing it.). lol. we would then use the paste glue to make little paper mache bowls and cups etc.. . i really miss my grandma(she passed away a couple yrs back). so thank you for bringing back good memories of her when she would babysit me as a little girl. :)

I've been making sietan for decades and never let it 'rest'. I can't see why it would need it. You really need to knead it more than you did.

*On Braiding* : My sister explained it to me this way. A standard braid brings the alternating outside strands to the middle, putting the one over the other. An inverted braid does the same thing, but does so by bringing them under each other. A French braid is a standard braid with extra bits braided in (causing some to think it originated with a mademoiselle who was hungover and thus not fully coordinated).

The section you seasoned was done well, thank you for showing that bit. No one who makes seitan leaves it bland or boils it in plane water. I think some TikTok users may have for show, but that's not at all how it's done. You did right seasoning it up! Boiling is never the last step, that's when the "dough" becomes "seitan". From there it's turned into something more as you did frying it, there are tons of possibilities! Pan seared, fried, baked, grilled. I was so stoked you even went out of your way to get vegan "chicken" seasoning!! Then you dipped it in buttermilk. I know you addressed this but - Oh, Barry. 🤦‍♀️ Any non-dairy milk would do, but you can also make vegan buttermilk by adding about a tablespoon of lemon juice or your vinegar of choice to a cup of non-dairy milk and letting it sit for a couple of minutes. As a vegan it makes me excited to see this going around and people seeing the possibilities! When people do it right that is, with seasonings and final cooking steps - TikTok users need to work on fitting some of that into that short time, lol.

easy braid tip! swap the right with the middle then the left in the middle then the right again...repeat till you have your desired length

There is a RU-vidr called Sauce Stache who makes alternative meats and other vegan things. I remember him doing this and it took ages! Kudos to you for sticking with it that long!

Months ago when I first saw this on tiktok I gave it a go and the appearnce was so close to chicken thigh/ breast I was shocked. I didn't use any seasoning so it was pretty bland, but the texture was there.

Going to try this with the korean fried chicken recipe, that one really doesn't work very well with fake chicken pieces you get in supermarkets (though it tastes delicious anyway!) Also for vegan buttermilk, 1 cup of soya milk with 1-2tsp of lemon juice, mix well and leave for a minute.

Engevita nutritional yeast has a strong chicken vibe for me (only that brand), so if you can get it, I think, using it to flavour /marinade the seitan will give it even more of a chickeny vibe ❤️❤️❤️ also, Edward and Sons and Massel make vegan chicken broths 🌱❤️ love to Phoebe

Not carb heavy, its the carbs that are washing out.......by the time youre done washing it almost all the carbs have gone down the sink and what is left is protein.

Here in Hong Kong, fried gluten balls are a must for hotpot because they're puffy and soak up the flavour of your soup base.

I've personally been making seitan (we just call it gluten steaks) since the '70s, and have relatives who have been making it much longer than that. I like to use about 1/3 whole wheat for texture. Don't rinse too much; my ex-MIL nearly washed hers all away once. LOL I've also never let it rest like that, and always, always boil it in some kind of broth, not plain water! We usually roll ours into a log then slice it into steaks, boil in broth for an hour and let rest overnight in the broth (refrigerated). Bread and fry the steaks and serve with cranberry sauce or use the remaining broth to make gravy. Yum! The leftover steaks make fabulous sandwiches.

Sooo. Saw from EmmyMade you can use the starchy water to make dumplings and Fake bacon. Plan on trying either or those out if you make this again? Someone mentioned smoked paprika to add more smoky flavor.

@@Tridd666 That too. I ended up using a chicken boullion cube, mostly salt, MSG, and palm oil, but also some chicken and veggies. With KFC style coating it turned out fairly decent, only it was more like the edible-not meat bits around the bones in fried chicken.

Technically what youve got when youre done isnt flour and water, it is the protein from the flour with everything else, including the majority of the carbs, washed away. It is NOT a complete substitute for meat, there are a lot of nutrients like iron and vitamin B12 missing and you'd have to get those elsewhere (leafy greens but again, not as good as meat and you'd have to eat a LOT of spinach to match a small piece of steak for either) but it IS a good source of protein for muscle building.

when you braid you just alternate sides so left over to the middle then right over to middle and continue. You just bring the left and right sides over to become the middle strand. :)

VEGAN BUTTERMILK: 1 cup of soy milk, add 2 tbsp of white vinegar, stir, let sit for 10 min, done. Plain yogurt can also do if you have that,

My biggest problem with seitan is that this is not really a chicken alternative. It has no protein. It can't be promoted as the "meat" part of a vegetarian meal.

To braid, the easiest way is to leave the middle alone, move right hand piece to middle, pick up the ex middle one on right hand, then do left hand to middle, pick up ex middle and left side, and repeat

Oh I've seen this process done to make glutenous noodles on a program about regional foods of China, interesting. Fun fact, you *can* just cook normal yeast to get an interesting meaty flavoured broth.

To braid, you divide what you're braiding into three equal sections, lay them out next to each other, and then pick up the left side and bring it to the middle and pick up the right side and bring it to the middle, repeat....

It would be really nice to see you try a proper recipe (no TikTok!) for seitan after this.... anyone trying the two-ingredient version of seitan is going to be really disappointed if that's what they think seitan dishes normally taste like. My favorite seitan-based dish has fourteen ingredients for the "meat" (compared to 8-10 ingredients in the comparable meat dish) and it is delicious. Proper seasoning and cooking it the right way really does make all the difference.

Not much point, you'd wash out any flavour it added getting the starch out. Better to drive the flavour in once the starch is out by kneading it like Barry did.

I was kind of hard to watch the braiding 😅 always put it in the middle 😄 I am not good at it, but I always lift the outside leg into the middle, and switch up which side you put in the middle 😄

you should have let it rest after Boiling and then Fry it in a pan or roasting in thge oven befor boiling it and still fry it

Barry. Next time, take qourn chicken pieces, blend them to a paste and form qourn burgers or nuggs. Add a zinger type batter or seasoned crust (tarragon, black pepper based is good). Boom.

It's actually full of protein because it's entirely gluten, but that's the only thing it has. It's devoid of most other vitamins and minerals a person needs.
