Aubergine Baguette Sandwich recipe is inspired by German Schnitzel & Bread recipe. Here, Instead of Meat Schnitzel, an Aubergine Schnitzel is made with Indian Spices 6 Served with Mozarelle & Beetroot vinaigrette.
Ingredients
For Aubergine Schnitzel:
Aubergine/Eggplant/Brinjal - 1
Salt - to soak the Aubergine
Oil - for Shallow fry
For Rice flour Batter:
Rice Flour - 3/4 cup
Salt - 1/2 teaspoon
Red Chilli Powder - 1/2 teaspoon
Garlic Ginger Paste - 1/2 teaspoon
Water - 1/2 cup + a little more
For Coating:
Rice flour - 1/2 cup
Salt - 1/4 teaspoon
Cormeal/ Semolina - 3/4 cup
Salt - 1/4 teaspoon
For Sandwich (per serving):
Baguette - 1/4
Beetroot Vinaigrette - 2 teaspoon
Aubergine Schnitzel - 1 to 2 piece
Mozarelle - 1/2
