The calaloo is best picked before it puts out the seed heads. ( The one in the back that you referred to Is the best specimen for eating.) The one in the front has gone to seed, and the stalk would be tough. Just like basil, you wanna cut it so that it will spring side shoots and become more bushy for bigger harvest. Saute your onion, peppers, and garlic herbs, and then put in your chopped up calaloo and let it steam just like spinach.
