I hope Ate Jessica knows how much of a service she’s done for me and probably a lot of other abroad Kapampangans, especially yung mga taga Angeles, bc there isn’t nearly enough coverage on our lovely food and culture and it really hits close to my heart seeing all of these places again! Hindi pilit ang mga reactions, very natural lang! Thanks for this wonderful episode! Dahil SUMMER na, please do another segment for SUMMER (beat the heat in the summer) I recommend you some place that is nice but not very well known discover. Like in Norzagaray, Bulacan the "Bitbit River, Bakas River, Pinagrealan Cave, Pakiling River, and SAFE HAVEN MARAMO RIVER little Palawan. Some place in Norzagaray, Bulacan I've mentioned were already featured before at GMA's show Biyahe ni Drew! Thanks Jess!

As a Kapampangan, I enjoyed this very much. As an aside, my dear ima was a friend to Aling Lucing. My mom was a vendor in front of the Sandico Clinic in the San Nicolas Market in the olden days and so was Aling Lucing. But back then Aling Lucing was not into food yet, she only sold veggies.

Aling Lucing's sisig is one of my favorite childhood foods. I remember eating it every Sunday when the cook was off duty. I was young back then and I was living with my grandmother. Aling Lucing's sisig was the best. It had a deep, smoky flavor from the charcoal grilling of the pork skin and meat. It was also very juicy, not dry looking at all. As I watch this video of Aling Lucing's sisig, I was sad to see that it is no longer the same sisig I knew in my head. The sisig in the video was kinda dry. 💔 I guess things change over time, especially when the person who created something is no longer around. Aling Lucing's sisig was a unique and special dish, and it's only natural that it would change after she passed away. but I will always remember the sisig that I loved as a child.

I wish you can have part 2 of this cause, Pampanga has more to offer like the Everybody's Cafe, and Apag Marangle Restaurant to try the Kapampangan exotic food(if you wanted to really explore pampanga), and also the famous seafood house Crabs N Crack. I hope you'll come back :)

There was a time that we went to Aling Lilian's for our thesis and to our surprise she fed us some of her specialties. So happy you had the chance to taste Pampanga food, there's actually more hahahaha hope there's part 2 ❤

Was legit worried that you went all the way to Angeles to eat at Dainty. Hahaha. I love Dainty (I legit laughed out loud when this was the first suggestion) and I get why it was recommended but Aling Lucing's, Mila's and Cucinang Matua really were very representative of Kapampangan food and I'm glad you enjoyed.

I used to study in Angeles when i was in junior high school and im not gonna lie, the food there was really (and always has been). Our school have the best food, we have there fried siomai which was 3 for 10 pesos that time and the chilli oil was so OP. Not to mention they also sell the best ulam dish there and my faves were the sisig, sipo egg and the chicken fillet. I also remember after class we also go to my friends house and her mom always prepare super delicious ulam and their fridge is always filled with bottled soy choco milk. That was the only school that i've experienced decent and quality food and i wish i can go back there.

i think the reason the older people recommend dainty is that most of the time they eat there when there is a family occassion. example, pag birthday ng isa sa mga auntie ko sa dainty talaga sila nagaaya. saka aircon kasi. hehe as for aling lucing, its undisputed that the sisig there is top notch. kaso sobrang dami narin may masasarap around pampanga, most notably in angeles. one time, may kinainan kaming sisig sa tabi ng angeles hospital, super sarap. pero parang maliit na turo turo lang. and also, may sisig festival (not sure meron pa ba nun) thats why almost every restaurant has also upped their sisig.

Ang galing mo talaga mag food critic haha, di lang basic ang pag critic mo, where other people would just go “o it’s so good, etc” but you dive into the reasons why - marami pa additional opinion; like yung judge mo dun ky Mila’s sisig, where you said the first taste is what you’re familiar with but as you chew into it, it’s like an unfamiliar but tasty flavour. You also judge based on multiple perspective or preference (not just your own) including others perspective/preference whether it’s those people that like the simple taste or people that are into stronger flavour, etc. On top of that entertaining person and vlog overall (bonus: maganda pa 😳)

You still missed a ton of good Kapampangan restaurants that serves from heritage to fusion menus. Like..Apag Marangle, Bale Dutung and Downtown Cafe, 25 Seeds and cafe fleur, NingNangan, Bale Capampangan, Binulo Restaurant, Matamih, Abe's Farm(ecorestaurant), denlim, Lola Nors to name a few.

Another great video! I feel you when you had difficulty explaining the flavours. One of my favourite food vlogger Amy made in Japan really explains flavour very well. This series could branch out so much with showing the distinctness of regions in the Philippines through food and I can't wait to see Bacolod amongst that since it's such a foodie with very unique taste as well. As inspiration, Best food review series on Vietnam during covid is sooo interesting and very well made. Thanks for another great video!

Also Nice Jessica does a segment on Koreatown in Pampanga. I remember hearing stories that Koreatown used to be a District for Americans when Clark was under the United States Air Force when I was little. Note I was born in the United States but my parents are from Pampanga and know the history of that in previous decades.

Once I saw that Bringhe, I remembered and missed my Lola.. She used to cook that for Noche Buena together with her signature Asadong Kapampangan. She's from Mexico, Pampanga as well!! Pero dapat may nag recommend ng "Razon's Halo Halo"!!~

For me, the best way to describe Aling Lucing's sisig is it has that rich charred meaty flavor with the crunchiness of pig's ears. Good description though in that it has that basic/OG flavor. As a Kapampangan, I wish someone recommended her Kilayin (different from Kilawin of other provinces) and Buro. I want to see more out-of-town Paborito like in Tagaytay, Batangas, etc. :)

As a Kapampangan, I wouldn't recommend her kilayin as she previously mentioned that liver is not her likes (she'll eat them when served to her, but it's not her motivation to eat)

Pulutok is a better option but only carinderias serve it. She could also try Sinigang sa santol or kamias since I think it's way better than sinigang sa sampalok.

As you journey throughout different provinces, you may encounter similar dishes but the preparation or the way they cooked it is vastly different. Asado in NCR is different from Asado in Pampanga Pinakbet in Pampanga is different from Pinakbet in Ilocos Pampanga serves "exotic" dishes too like Salagubang (Beetle in english) or Croc meat or Frog dishes. It would be ideal if you also have someone native in the target province to help you pick the local's favorite eating spots. Great job and enjoy!

Kusinang Matua is one of best places. Imagine if you were hungry going in and the fact that you found the dishes delicious being full should be a testament to how good it is. Pampanga takes pride in their cooking and their flavor profile is balanced that leans closer to sweet in my opinion. Love from Masantol

Sana your team takes care of you, dont put Jessica on the spot to purposefully test her, she tends to say yes but what if she is not comfortable with what you make her eat or do 3. Pls take care of Jessica she looks so hardworking to the point that she doesnt look like she has a team working for her, 4. change your pd, dont want to hear her voice 5. Sisig became famous all over the world bcoz of egg and mayo. So u cannot say that it is a joke if there's an egg it's omelet or its a dinakdakan if there is a mayonnaise.. thats why jessica didn't like yha much the original sisig coz really it so simple taste.. so thanks to the evolution of the sisig thats why it is now well known..

Actually Chinese, Spanish and indian cuisins are engraved in Kapampamgan food culture. Kare kare came from Pampanga(Original curry from India brought by the Sepoys). You will notice alot of Kapampangans have fair skins this is due to their Spanish and Chinese heritage.

Walang sibuyas? 😁 any sisig recommended by the locals must be good. But the original sisig will stay as the real deal. I was in Clark when it's still an American AB and our pulutan is always sisig from Aling Lucing. 👍

Luzon in general is more on salty and sour taste when it comes to dish/food while visayas and mindanao is more on spicy, creamy-gata kind of foods

For me Pampanga is not the only province that loves to cook. Because many parts of the Philippines have special cousins that show how Filipinos show their style of cooking. For me bicol because i love spicy food. The Bicol style for me is very good.

Would really love to see Jessica have a food travel around the Philippines. Example: Adobo food tour and pancit food tour. Exploring the different types of ingredients available to a city and how they turn it to different dishes. I really think that although Jessica says' that she is shy, she is doing a really good job hosting 👍👍👍

You should try sisig with condiments toyo, sili and calamansi. Manyaman at madami katalagang makakain na rice. Sisig is my favourite to

Aling Lucing is the most famous for Sisig here..but the authentic Sisig is very different from what you ate, or that we know of.The pork is mixed with chicken liver and onions etc.

I'm 75 years old and have been tasting Sisig from my Pampango relatives kitchens since the 1960s. It tastes nothing like any of the current "authentic" versions. It was not sizzling on a plate, it was served room temperature and dressed in Pigs brain. But who cares about authenticity these days. I don't think anyone would eat truly authentic Filipino food without pouring Knorr seasoning and crisping it up for crunch. Just saying. 😁

Actually, as a kapampangan. There's no many restaurant here in pampanga because most of the people here are good in cooking. Personally, instead of going out, I will just choose to cook at home.

Sisig has different variations per municipality in Pampanga. There is also what they call Sisig Bacolor.
