Out of curiosity, my torque converter had some shavings come out of it and blackish goop and I was wondering if that was normal, I ask because it appears that in the pan that you drained the torque converter has shavings in it

How do you prime the torque converter with new fluid for start up?

the transmission high-pressure pump fills it up... one of the ATF properties is anti-foaming when loaded down with air.

Is it safe to change the transmission fluid and filter on a 1984 R107? 245K miles. No mechanic in town will service it. No leaks or anything.

I would. Just use proper fluid, gasket and filter. Mechanic probably just doesn't want the responsibility if something breaks within a few weeks of servicing an old classic car.
