The Episode where Leandro discusses this original bartender's handshake cocktail and does something that almost ruins the video.
The Aviation was created by Hugo Ensslin, head of the Hotel Wallick in New York City sometime in the early 20th century. We don't have an exact date. We do know however that it first appeared in print in Ensslin's book: Recipes For Mixed Drinks (1916).
In the early days of the cocktail renaissance this drink traveled the globe as a "Bartender's Handshake" A drink only well known within the industry and therefore if you ordered it you were considered an insider. Decades later this drink went out of fashion and became an obscure cocktail but never quite disappeared thanks to Harry Craddock, head bartender of The American Bar at The Savoy Hotel in London. Craddock's recipe, though, omitted the creme de violet which in my opinion is a shame and persists on some cocktail menus to this day. Although it isn't asked for very much, The Aviation is making something of a comeback. In this recipe we have gone back to the original and I really think you should try this cocktail. I've been making this drink for several months now, and I can definitely confirm this is the most balanced recipe for my palette. I've read a few different ideas on it in several general mixology books, and almost all of them downplay the Creme de Violette. To me, the Violette is what makes this drink soar.

Really enjoy this cocktail. In order to get around the 3/8 measure, I mix the violette and maraschino in equal amounts in a separate bottle then add 3/4 oz of that mix to the drink. 3/8+3/8=3/4 in case anyone couldn’t figure that out.

Aviation is my all time favorite. It's pure nostalgia in taste, reminds me of the hard candies I'd only get on road trips when I was a kid. Plymouth Navy Strength goes savage with it!

A bar that I go use to make this used Bluecoat Gin with the R&W Violette and lemon juice. Discard the maraschino and the aviation name and called it a purple moon.

This is interesting to me because I was at a mixology bar once and asked for a drink using Hendrick's and Lavender syrup, and the drink I got used those ingredients, plus lime juice and maraschino liqueur. That cocktail is one of my favorites and this one strikes me as being VERY similar.

Thanks Leandro and Marius. I love the aviation cocktail, and I make a slight variation on the death and Company spec (from the first book). 2 ounces gin, three-quarter ounce lemon juice, half ounce Luxardo maraschino, 1 teaspoon creme de violette, 1/4 ounce simple syrup. I garnish with a Maraschino cherry, because I love the look in the bottom of the glass against the blue drink.

This is probably one of my favorite cocktails, in particular because of the color and uniqueness of the flavor, but also because you can mold and shape it depending on what type of gin you use in it. I'm partial to Hendrick's, but I find each gin adds it's own unique blend which can accentuate or push down some of the other flavors in the drink.

I love these! Super crazy floral, almost bone dry on the palette (but in a lovely lively bracing sort of way), with a beautiful tartness and lift imparted the fresh lemon. Not for everyone because of the perfumed super floral flavor and pretty intense dryness but an absolutely vibrant classic cocktail worth trying at least once!

One of my favorite cocktails. Tried it at Lula Distillery in New Orleans with their gin and the old manager, who recently left :(, would talk cocktails with my wife and eye. It was always a fun experience and cocktails were always good.

Never had any Maraschino in my house, but tried a Moonlight which uses cointreau in place of it (so gin, lemon, CdV and cointreau) and it's lovely.

I love this drink and it’s all because of your original video. I even bought the “other” jigger with the 3/8 ounce measure to make this. I’ve even made some converts. Thanks for remaking the video though. Still the same recipe as the last! You have to go Luxardo Cherries for a garnish as it tastes so good at the end.

Why can’t you drink there? In the good old days I had a college buddy from Afghanistan. He loved weed (of course) and all kinds of music - his fav was Bob Marley and reggae in general. He also was thumbs up with any kind of booze. Very interesting intelligent guy. Him and his entire family were probably murdered in the intervening decades. Afghanistan was making great strides looking west at the time. The soviet invasion in 1979 f’d it all up.

My favorite cocktail ever.If you want the more blue color I would recommend The Bitter Truth Violet Liquor.Creme Yvette gives it a pink color.While Rothman and Winter gives it a pale purple

Fernando Diaz I know it’s a bounty hunt for sure.It is worth the search though.I own a lot of different Violet Liquers and I would say Creme Yvette is the best with flavor,if you use it your Aviation will be a dusky pink.Next would be bitter truth the Aviation will be Sky Blue like what I think Hugo Probably envisioned.Then Rothman and Winter if you use that it will be the same as the video you just watched.

Glad you said that not everyone like maraschino. I've made a few cocktails with the liqueur and thought I was just crazy for not liking it as much as other similar drinks. (Notably, I didn't like the Improved Whiskey Cocktail when I like Old Fashioneds and Sazeracs)

Love this drink! The first time I made it, I didn't have crème de violette on hand, so I subbed it out for Parfait d'Amour, which I actually like better now that I've tried it both ways. I later found out that's a popular 2010 variation credited to Takumi Watanabe. Someone's always had all the great ideas before you.

I think you should really use a traditional Dutch style genever gin for this cocktail instead of a London dry style. A really good botanical Dutch gin really boosts the flavor complexity and fullness of the flavors and combats the dryness of the Luxardo. IMO. My favorite is Pittsburgh based Wigle Whiskey’s Dutch Gin.

Bought a bottle of creme de violette tonight to make this. Was kinda put off by the fact that the violette smells exactly like Odor Eaters foot spray from the bottle, but the finished cocktail is outstanding. Super pleasant and the violette covers up a lot of the funky maraschino notes that I dislike in the Last Word.

This looks delicious. My recipe was.5 ounces of luxardo, .75 ounces of lemon juice, 2 oz of navy strength plymouth, and .25 oz of creme de violet rothman and winter.

Oh damn, the bottom of the Barfly jigger is 3/8 oz? I did not know that, they should advertise that because I couldn't find a 3/8 oz. jigger. I heard there was an Oxo with 3/8 oz. but could never find it.

I usually go for .75 lemon, .75 creme de violette, and 1/2 luxardo with the 2oz gin. Makes it a little more well rounded to me. putting a flamed lemon spritz is also pretty nice.

The Van Buren Room at the Belle of Dayton Distillery makes some of the best cocktails in the state. It’s where I had my first Aviation. They use their own gin, the Dayton Gin. Because it’s more a new world style, it gives the drink a different experience and I didn’t think I liked the drink for a long time. So to those who don’t like it, try it somewhere else, the recipe is the same but different spirits and different hands on a new day? You may find one you do like.

I love the Aviation, but I haven't really settled on specs that I am fully on with. I have a question though. I bought the OXO jigger, I know you have that one as well. Even when using that one you said 3/8. The mark on mine is 1/3. So I am a little confused, could you clarify. Oh, and thanks again for this and all the other great videos, I appreciate them

Gotta love the good ol' aviation. I've seen a version made with citric acid instead of the lemon juice to keep it transparent. What's your take on such approach?

Yay for the Aviation! That said, I wish you had taken the opportunity to discuss some of Aviation controversies: I see recipes claiming you should use Creme de Yvette instead because it's "better". Also see a lot of recipes remove the Creme de Violette completely (boo!)

I follow basically the same proportions but I also add 1/4-1/3oz of 1:1 simple for the citrus balancing reason everyone is talking about. Also sometimes I’ll just omit the maraschino altogether and double the syrup. So basically a gin sour with a little violet in it.

Didn’t have lemons, subbed limes… didn’t have regular Luxardo, subbed apricot Luxardo. It was nice! Definitely interesting. Should have scaled the apricot back a bit, though, it competes with the violette.

I typically spec this out at 2 gin .75 lemon .5 luxardo .25 violette I think it balances out quite nicely.

My favourite cocktail and I am moving next week and the new area doesn't have Creme de Violette 😞 Gonna have to find a mail order source and probably get a bottle before Monday so I can take one with me. I back the lemon off to 1/4 oz. when I make them. Otherwise, it tastes like spiked lemonade to me.

I wanted to try this and picked up the Tempus Fugit violet. They don't call it a creme. It is basically like biting a lemon. Have you tried the Tepus Fugit, any thoughts on ratio adjustments?

Hello Barfly or viewer, I have a question :D I started making this cocktail after I saw your last video on it. The only thing I struggle with, is that after a while the lemonjuice seems to lump together. Some parts of the cocktail are now very crystal clear and others aren't. Now the question is, could this be due to a bad strainer? Am I using the wrong lemon juice? Maybe someone solved this. Or maybe it is normal. Also a fine answer. Anyway, thanks for the videos. Learning a lot, cheers.

Could be that you’re not fine straining the lemon juice to get the pulp out?

I had the same issue, whether I fine strained or not. I was able to get it to be clear by using a cheese cloth once, but I squeeze the lemons right into the jigger instead of pre-bottling, as I don't think I would use bottled juice before it went bad, and I won't use the cheese cloth for individual lemons.

Niklas: I’ve been making them for years and have never seen this happen. I always fresh squeeze my limes and lemons. Do you by chance use a commercial lemon juice?

Try Meyer lemons, buddy. Cuts down on the tartness considerably and plays nicely with the liqueurs.

I've had delicious Aviations that are closer to sky blue than lavender in color. What would one do to change this recipe to that? A little more creme de violette? Less? Something else?

This is by far my favorite gin cocktail. Call me crazy, but I like to up the Violette. 1/2 oz for sure! 😊

Creation series entry. name: Dead Irishman Irish Whisky -2 fl. oz. Lime juice - 0.5 fl. oz. Simple Syrup - 0.5 fl. oz. Over-proofed Whiskey - 0.25 fl. oz. Bourbon - 1 fl. oz. Shake, top with a light float of absinthe

Wow.. lol seen this and looked at my bar had everything, so just made it on the spot!! Not bad at all but I'm sure this thing at noon may not be a good idea lol! Next time I might use a spray mister for the absinthe.

I always thought this could have been Elizabeth Taylor’s ultimate drink. Although she didn’t really have violet eyes through lighting magic she wanted us to believe she did. I love the color of violet, purple and such. In its true essence it’s such a rare color in nature - the rarest of all colors in birds.

I love an Aviation... but... I now have a massive bottle of Creme de Violette sitting in my home bar and I don't want to bore myself and the missus to death with Aviations, so what other suggestions would you have for varying up home bar use of Violette?

That's probably why I never pulled the plug on this one. Didn't want to get the creme de violette and end up not liking it and have it collecting dust somewhere Granted I'm sure I could come up with stuff to make with it. Guess I'm just procrastinating🤔

Just fixed myself one with beefeater and tempest fugit. I actually appreciate that floral, rose, violet aroma so i did the following: 60ml beefeater gin 30ml tempest fugit 22,5 lemon juice 15ml luxardo maraschino. Does make for a more pronounced “soapy flavor” if you will. But i feel it is less tart, more balanced and very aromatic. 1 maraschino cherry finish adds value for me when i drink it due tue the final sip, being sweeter/less tart and having another complex Aromatic profile. I do miss the blue-ish color. By using tempest. Your color is more unique i’d say.
