Maestro, el ladrillo es buen aislante del calor, pero luce bellísimo, gracias por tan grandes ideas que se habían perdido del pasado, entre los albañiles y la Masonería todo eran secretos, pero los medios sociales rompieron tiempos y distancias. Cada día de trabajo siempre le doy gracias al supremo por aprender cosas valiosas que me hacen ser alguen sin apariencia, con humildad.

I have seen many videos of old spanish building methods (bricks & clay tiles) and i think spanish folk architecture is so rich and the people mainly in Spain, still loving their folk building traditions, so still having so nice traditional villages, unlike here in Greece they are looking for about "easier" and quicklier methods, so today we are "swimming" in the cement and living under fake "modern" roof tiles!! Respect and still continuing your traditional terra-origin buildings!!! With respect from Lesvos, Greece!!!

what did he have in his mortar? why those bricks don't fall? I got cement and sand in my mortar and I cannot keep my brick from falling.

This looks very cool & he is very skilled, but this is not catalan vaulting. Catalan or timbrel vaulting is not constructed using bricks, but rather with roughly 50% tile & 50% mortar laid out horizontally, and then over each other in harringbone fashion - 3 layers typically. This would be more likely to collapse in an earthquake than catalan vaults which form a bond similar to reinforced concrete.
