Today I will show you how to make a delicious Vietnamese honeycomb cake with 2 flavors in one cake: Pandan and Ube Coconut.
Here are the ingredients:
1 can 400ml coconut milk or coconut cream
1 and 1/3 cup or 270g sugar
2cup or 240g tapioca starch
2tbsp or 20g rice flour
8medium or 7 large eggs at room temperature
1/2tsp ube extract
1/2tsp pandan extract
1tsp vanilla extract
3tbsp melted butter or coconut oil (1tbsp for baking pan)
2 pack of Alsa baking powder (11g each total 22g)
Bake at 350F or 175C for 50mins, then turn off and leave for 15mins with oven door slightly open.
