Though Vietnamese and Cajun cuisines share a lot of common ground, it wasn’t until a community of immigrants and refugees came to New Orleans in the 1970s that the flavors fused. Over time, their descendants have begun to experiment and introduce new ideas, from Cajun crawfish to brisket bánh mì (and even a phở-rrito). We explore the best spots in the city to shop and eat like a true local.

@Daisy Meaux Juice’ while I understand what you're saying, I don't see why a po'boy isn't also technically a bahn mi? If visit where we're from (Luke & I), I think there's more people who are familiar with banh mi's than po'boys, so explaining a po'boy here would be saying something like it's a bahn mi but with southern style fried shrimp. Or all of them just be called a sandwich since that's what they call 'em in France lol... It's all just a matter of perspective.

@@EyDerVu He's partly right though, a lot of Vietnamese Americans can't speak Vietnamese anymore and associate themselves less with Vietnamese culture. Same way German or Italian Americans who have been here generations wouldn't consider themselves German or Italian anymore.

@@richbrook101 He replied to a "true" Vietnamese and not an Vietnamese American, though. In the past decade there has been a wave of Vietnamese Americans who wanted to to get in touch with their roots and returned to Vietnam. You don't have to be a full blooded Vietnamese to feel like one. You could say the same about first generation immigrants who came to the U.S. Many of them still keep in touch with their traditions and roots and can still be American patriots at the same time.

@@EyDerVu Yeah you’re right, although if he was talking about Vietnamese Americans in general, my point still stands. For example, I’ve seen some of them spelling Banh Mi as Bahn Mi - which is Americanized version and that’s just wrong. First American immigrants preserved the most important aspect of their former British culture - the English language. Same with French in Quebec.

Damn I wish This came out a year ago when I visited New Orleans during thanksgiving weekend. This video was excellent. I’m always amazed by the work ethic , versatility and adaptation of Asians all throughout the world. Especially in food industry

New Orleans gave me nine of the best years of my life. Amazing place to learn to cook. Advice for any young, aspiring cook: move to New Orleans, stage around, hell, try your luck at Commander’s Palace- it’s a culinary boot camp.
