Bun cha is an incredible dish! I also discovered this dish with a local. He took us to his favorite spot. As soon as we arrived, you are hit with the smoky charcoal smell created by pork fat dripping. We sat down on these tiny stools and the rest is history. Bun cha is my favorite Vietnamese dish.
and I just mean like bc of the scale of industry, everything’s on a truck or plane for days before it reaches us. Certain smaller towns will have more direct access occasionally, but even in the Central Valley in California you’ll eat about half fresh local if you’re lucky

Bun cha is my jam. Love a good pho but just can’t go past a good bun cha since it’s not as common overseas. I normally ask for an extra pho sized bowl and just dump everything in there. Someone once tried to tell me I didn’t know what I was doing because I’m not Viet but dude, I know exactly what I’m doing, which is finding the most economical way of stuffing my face with one of my top 5 dishes in the world.
Indians here including me will for sure think of bun-chai ... (buttered bun & tea) 😂❤❤ Its a good and popular breakfast in India as tea is consumed at a large quantity in India daily❤❤🤝😌
