For biryani I would recommend either Arsalan or Dada Boudi. Two best biryanis. Arsalan is very good one at Park Circus where you can find variety of mughlai cuisines. And Dada Boudi serves the best biryani. Oye Balle Balle Dhaba in Salt Lake Sector-3, they serve very good mutton Nalli kebabs but call before you visit and ask whether it is available or not. For sham wala kam you have variety of places in Salt Lake area and you will definitely love the vibe.
There are 2 types of biryani in Kolkata. One type you will get in dada boudi and another type you will get in arsalan. Try both of them if you get the chance
And also would ask you to enjoy the actual Bengali delicacies like sorshe ilissh, ghonto, bhetki paturi, dhoker dalna, chingri malai curry. Because you eat mutton and chicken in Delhi but when in Bengal do what Bengalis do.
If you want authentic Punjabi food in Kolkata , go for honey da dhaba . The place is old criminally underrated . Try their murg lasooni kabab u won't be disappointed .
Please visit dada boudi or arsalan for biriyani. For authentic Bengali cuisine visit: 6 Ballygunge place or Oh Calcutta. For Chinese you have to visit Tyangra. Other Chinese restaurants being Asia Kitchen, Mainland China.

In bengali a is pronounced as o, so that's why it is written kasha, but pronounced as Kosha, like rasgulla is written with a but pronounced as rosogolla
