I never thought about combining eggs and seafood. Oh wait, nvm. Salmon and eggs! I've cooked that before on toast and English muffins as an open-face sandwich (nice combination). When it comes to toasting the bread in the same pan that the raw scallops are cooking in, is there a way of doing that without worrying about cross-contamination from seafood and the juices getting into the bread? Would the heat from the pan be enough Kill any type of foodborne illness-causing bacteria?
Ok can someone please explain why almost always my mayonnaise turns watery or like milk water.. I can never get the consistency of mayo. Am I suppose to use specific type of blender? Please help me achieve a proper mayo..
If it's turning watery that means your emulsification is failing, add oil slowly, add acid like vinegar or lemon juice, add good protein rich product for binding like egg white and then fat like egg yolk.
