Peak Moment 167: Nevada County locals Jim Wray and Loraine Webb show us the how and why of packaging bulk foods with nitrogen. They're using equipment available for community members to use at minimal cost. Jim demonstrates packaging: make plastic bags using a heat sealer, fill with foodstuffs, suck out the oxygen with a small vacuum, then replace the air with nitrogen and seal. Loraine, organizer of The Neighborhood Readiness Project, has arranged with several locally-owned grocery stores to sell 25 pound bags of grains, beans and other bulk foods at just above cost. Loraine's vision is our having food caches in every neighborhood in the county, so that, if the trucks stop rolling in an emergency, we'll have food for ourselves AND to share with our neighbors.

@yonny1954, I'm totally with you on self-reliance skills. I'm can report that I learned how to use the on-off switch while keeping the bag opening closed so as not to introduce more oxygen, while at the same tme getting the feel for how much air to suck out so the bag remained flexible. It took a few passes but wasn't impossible. But, like any new manual skill where you have to juggle several factors a once, it takes practice.

The "air" in beween the grains can move about and yes the vacuum sucks out that air too. If it's a concern, bury the N2 puge line in the grain. and let it purge for a cooule in allowing the gas to escape downward (not upward). Repeat 3 x. Also he says it's a 90% replacement, but air is already 79% N2 and only 21 % O2. So a 90% replacement, is pretty good, but with some simple changes he can do much better and also no need not to vacuum it down at the end because it's going out and it's already full of nitrogen, not air.

You can make plastic from hemp and 10,000 other products from both the cellulose and fiber. including food, bio fuel, medicine, clothing, soap etc..

Google: You can't store grocery store items for five to ten years, as you can with specially freeze-dried or sealed foods packed in nitrogen or vacuum sealed. As a result, if you go with a larder full of grocery items, you can't develop your food stash and walk away. You need to rotate your stock, either on an ongoing basis or every two to three months.

Hello sir that was an excellent demonstration , i wonder can we preserve the flowers nd fresh vegetables same way i m also planning to use uv lights to kill the microbes after sealing i m waiting for ur precious suggestions thank u sir

@hitssquad I have used oxygen absorbers for a while and they work really well. The only thing I have noticed is that seeds would usually have probles sprouting. Maybe the amount of oxygen absorbed is so much that there is nothing left for the seeds to breath. For other types of food is just perfect...

Please use a vacuum sealer to take out air and than fill the nitrogen and than hold the bag right side up so the 5% air which contain Oxygen ( Nitrogen is more condense than air ) which is left in the bag will come up , little more vacuum from the top of the bag to take out the remaining air and Sealed it

Good idea! Regarding your idea to hang the bag vertical; With a steady enough system designed not to diffuse the nitrogen & air, it might be able to take advantage of the different densities of the gasses but it would be best for it to be ultra-still, take a longer amount of time for settling, &/or use an ample amount of injected nitrogen. A tubular bag would work best, I guess. Because O2 is more dense(1.429 Kg/M3), than Nitrogen which weighs in @(1.2506 Kg/ M3), they do not separate like oil and water. The slightest wrinkle in the plastic could cause an air current which will keep them mixed up.

bizojan Oxygen (O2) has a molecular weight of 32 = 16 + 16. Nitrogen (N2) has a molecular weight of 28. Nitrogen is lighter than oxygen. You have it. bass-ackward.

Wonderful demonstration and explanation (of everything)! Would it be a good idea to make the infeed board with the grain in the bag to be vibrated (like having an upside down orbital sander underneath) while sucking out the air (to get a higher percentage of the air trapped in between the contents)?

@ecraftsmen, good point. Gonna be a challenge to wean ourselves off oil. Have you any ideas? Glass jars come to mind. And re-usable plastics, like buckets (using oxygen packets rather than nitrogen)?

@MultiModality, toward the end Loraine tells us they're replacing oxygen with nitrogen, our non-greenhouse gas of choice. It's safe to be released in the atmosphere. Various studies show good storage from 3-10 years. Oxygen breaks down not only nutrients, but also decomposes foods. Replacing with nitrogen will clean anaerobic molds and critters."

@CTOL1, I like the simplicity of your idea. Perhaps one could add a small oxygen tablet to remove some oxygen and lengthen the shelf life?

@peakmoment Yes, I know that now. The best way to storage that kind of seeds is by using DIATOMACEOUS EARTH. It should be Food Grade, like Perma-Guard. Regards!!

Can you please tell me where to buy a tank of liquid nitrogen, preferable with the valves and hoses? If not can you tell me where to get everything individually. I would really like to price this out.

+Benny Bread ...Any supplier that provides bulk industrial gases. Just look up (Gas - industrial ) in the yellow pages.. Up here we have Air liquide and Praxair that sells this. Take extra care when dealing with Nitrogen gas because it displaces oxygen....so you don't want any leaks in a confined room. So don't forget to turn the bottle off when done!...He doesn't mention this

@PsyogiBottoms, I love your spirit. But as a seamstress, I couldn't make money producing a Tee shirt for that little -- if you're talking about sewing from scratch. (Difficult fabric to sew, a fairly complex pattern with curves, and things like neck ribbing that are woven into the textile but not if sewn by hand). Couldn't compete with low labor and transport costs. Yet.

@valhala56, I expect processed food like that doesn't need nitrogen. It wouldn't break down for decades, given all the preservatives and non-food items that go into them. You heard about the study that found MacDonalds food wouldn't compost in 500 years? It was an April fool's day article, but my hunch is it's not too far from the truth.

Well, I'm 20 minutes into this video and I have yet to hear WHY someone would replace oxygen with nitrogen when storing food. Guess I'll make a trip over to Google and search the answer myself.

"Plan to use oxygen absorbers within 6 months of purchase as they will lose effectiveness after that time. Oxygen absorbers will begin to work as soon as the plastic outer packaging (do not open the individual packets) is opened. Please plan ahead and either use all of the absorbers or seal the remaining packets in an airtight glass mason jar. This will cause the packets to stop working until air is introduced again."

The bagging material is PETROLEUM based :) The nitrogen tank was transported using petroleum.

Nitrogen gas is not harmful to humans. 80% of the air we breathe is nitrogen.
