Baingan fry recipe:
Here's a simple and delicious recipe for Baingan Fry (Eggplant Fry):
Ingredients:
2 large eggplants (baingan)
2 tablespoons oil (vegetable or mustard oil)
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 medium-sized onion, finely chopped
2 green chilies, slit lengthwise
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Instructions:
Preparation:
Wash the eggplants and cut them into thin slices or rounds. If the slices are too thick, they may not cook evenly.
Soak the slices in water with a little salt for about 10 minutes to remove any bitterness. Drain and pat dry with a kitchen towel.
Cooking:
Heat the oil in a large pan or skillet over medium heat.
Add the mustard seeds and cumin seeds. Let them splutter for a few seconds.
Add the chopped onion and green chilies. Sauté until the onions turn golden brown.
Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.
Add the turmeric powder, red chili powder, and coriander powder. Mix well.
Frying the Eggplant:
Add the eggplant slices to the pan and mix them well with the spice mixture. Ensure the slices are well coated with the spices.
Cover the pan with a lid and cook on low heat, stirring occasionally. This will help the eggplant to cook through and absorb the flavors. Cook for about 10-15 minutes or until the eggplant becomes soft and tender.
Remove the lid and continue to cook for another 5-7 minutes on medium-high heat to slightly crisp up the eggplant slices, stirring occasionally to prevent burning.
Finishing Touch:
Sprinkle garam masala and adjust the salt as needed. Mix well and cook for another 2 minutes.
Turn off the heat and garnish with chopped fresh coriander leaves.
