Ingredients:
- 2 large *baingan* (eggplants)
- 2-3 tablespoons *oil* (mustard oil is preferred for an authentic flavor)
- 1 large **onion**, finely chopped
- 2-3 **green chilies**, finely chopped
- 2-3 **tomatoes**, finely chopped
- 1 teaspoon *ginger garlic paste*
- 1 teaspoon *red chili powder*
- 1 teaspoon *turmeric powder*
- 1 teaspoon *coriander powder*
- 1 teaspoon *cumin seeds*
- Salt to taste
- Fresh **coriander leaves**, chopped for garnish
Instructions:
1. **Roasting the Eggplant**:
- Wash the eggplants and pat them dry.
- Make small slits in the eggplants and insert a few garlic cloves into each slit.
- Roast the eggplants directly over an open flame or in an oven until the skin is charred and the flesh is soft.
- Let the roasted eggplants cool, then peel off the charred skin.
- Mash the flesh of the eggplant and set it aside.
2. **Preparing the Bharta**:
- Heat oil in a pan and add cumin seeds. Let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Add the ginger garlic paste and cook until the raw smell disappears.
- Add chopped tomatoes and cook until they become soft and the oil separates.
- Add turmeric powder, red chili powder, and coriander powder. Stir well.
- Add the mashed eggplant and mix everything thoroughly.
- Cook on medium heat for a few minutes, allowing the flavors to meld together.
- Add salt to taste and mix well.
3. **Finishing Touches**:
- Garnish with fresh coriander leaves.
- Serve hot with roti, naan, or rice.
