Your dish looks stunning the wine the way you described it makes me thirsty and I want to drink it like right now. Please tell me where you purchased that Hermes Moschofilero 2019 wine so that I may buy it. You combined all the right herbs the fennel adds an amazing aroma to this amazing dish. The Halibut is perfectly flaky that's when you know its been baked and need no more further baking. Your presentation of the dish and the way you explain how you put it all together just makes you a natural at what you do. Thank you Jeff now I need to buy Halibut and make this dish this weekend while I can still get my hands on Wild Caught Halibut.Thank you my wine and Dine Guru.

Hi, Jeff! Now that I think about it, you are totally right: the finer you chop the garlic, the more potent it is. That is why using a garlic press really brings out the flavor. Salting and peppering the cherry tomatoes was a good idea so that they could release all their juices. I have never used picante peppers. I first learned about Fresno chilis from you, so you are my go-to person for more information about peppers. Thanks for the recommendations about using other types of fish. I agree that grouper would be another good option. Thanks for the reminder to check the halibut after 10 minutes since it is so lean. Overcooking it would be bad, I agree. Halibut is definitely my favorite fish...love its meaty mild flavor. The tomatoes you used were beautiful. This is my kind of meal any night of the week. I don't think I could pronounce that wine...but it sure looked great and Im sure it paired so well with the fish!

Another fine recipe. I did not know about slicing the garlic. Made me think of the prison scene in Goodfellas where the big guy is using a razor blade to slice the garlic ridiculously thing. Anyhow, our cherry tomatoes are starting to come in, so this will be a great recipe to try. I will even put the olives in (yuk) but I can do what I always do and pick them out (crazy that it is the only food I just can't stand). That wine sounds nice. Is this the same, Hermes Moschofilero Mantinia?
