This meatless baked ziti (pasta al forno) is a simple, yet hearty dish. It's a combination of Sunday sauce or a quick marinara, creamy ricotta (Polly-o brand), melty mozzarella, and salty Pecorino Romano cheese, and then baked until bubbly and just the slightest bit crisp. If this isn’t the ultimate comfort food, I don’t know what is!

Ingredients:
-5 cups Sunday sauce or marinara (about 3 for baking and the rest to serve on the side)
-1 pound ziti
-1 pound block whole milk mozzarella 2/3 cubed, 1/3 grated
-1 pound ricotta
-1/2 - 3/4 cup Pecorino Romano grated

I just wanted to come back and clarify something. Earlier I said that this was way too much ricotta and that next time I'd use a lot less. Apparently I bought a 2 lb container and used it all, so yeah, definitely don't do that.

When I was a kid every Sunday we would have dinner at my grandmother's house and she would always make baked rigatoni with braciole, meatballs and sausage. The kids weren't allowed to have the braciole. I made sure to empty the bottom of everyone's wine glass after the adults left the table.

Oh, boy, another "gotta try this one!" recipe! I love pasta with just butter and olive oil as a sauce, but add the cheeses and sauce, and it's a different level of "life is great!"!

Would love to see an oso bucco show. Also polenta, and things that can be made from it. My MIL would put leftover polenta in a baking dish and slice it in the morning, fry in butter, warm syrup for her grandkids breakfasts before they went off to their parochial school for the day.

I lived on baked ziti when I moved to Philly to go to college. Delicious and filling. And it didn't make me fat because I wrestled. LOL!

My nona would make a Bacalhau dish on fridays, along with squid, crab, anchovies & octopus. Although she did teach me some of her dishes and i just learned alot by watching all the time, there were some dishes i didnt get to see her make enough or that she didnt teach me to make. Her Bacalhau was one of them. And god, what id give just to have that dish again. She'd make fritters and i can kind of get those down, but she would also make almost another dish with the cod. Had a bunch of onions, potatoes, sometimes olives, sometimes not. It was one of my favorite soups that she would make, But i cant find out what this dish is. If anyone happens to know what it is PLEASE 🙏 🙏 🙏 LET ME KNOW! ive searched all over the internet, asked every family member & friend i can get ahold of and unfortunately noone knows what it was. They will remember eating it, but noone knows what it was called or how she made it. My grandmother was italian, Spanish, Portuguese, and swiss heritage. So maybe it wasnt an italian dish? Maybe someone else knows about this dish? Maybe its popular in their country/family? It was a thick-ish soup, but at the same time it felt very "fresh", almost light, almost salad like. I know that doesnt make any sense. How does a soup feel salad like lol. Salad isnt the correct term. It was hearty, but at the same time it was light, wasnt heavy like a long cooked stew. If anyone can make sense of my gibberish and happens to know what im referring to PLEASE PLEASE let me know! Any help would be GREATLY APPRECIATED!

I made baked ziti off the web site. Used my own sauce and boars head mozzerella. Used the good ricotta that starts with a G that you talk about and Moi! It was DELISH!!! This will have to become a regular meal! How do you think this would freeze?

I had an Italian boyfriend whose family was from Bari, on mainland Italy. It was interesting to eat his family’s version of Italian food. Baked ziti was pasta with a red meat sauce and peas. No ricotta, just mozzarella on top. Not better than American baked ziti, just different. Another really good thing was poached eggs and parsley in a thin, watery tomato sauce, kind of like a soup. I didn’t like all of it, though. One thing is mom made was a sort of ravioli with aged ricotta, which smelled so bad and tasted worse. She had to go all the way to Hoboken to buy this aged ricotta. I guess it would be considered an acquired taste….but, frankly, it was disgusting.

I'm a little confused about what exactly the Sunday Sauce is. Is it sauce that just has the tomatoes, paste, onions, olive oil, salt, pepper and sugar? Or is it the leftover sauce after you made the sauce with pork chops, meatballs, braciole or sins other meat having already been cooked in it? For example, in this ziti recipe ; has the sauce your using in this recipe had meat cooked in it already? Or is it just the sauce, onions, oil, seasonings etc? Thanks!!!

I left a comment below yesterday, but wanted to add something. I've watched this video a few times now and am pausing the video so I can cook along with you :) As I'm typing this, my pasta is bubbling and my cheese is grated. I've got two casserole dishes out and ready to layer once my pasta is al dente. I thought I'd make two so I can have one for my husband and I to enjoy and then I can take one to my grandchildren's home tonight. They are Italian, pasta loving kiddos. I'm absolutely loving your channel and am watching as many of your videos as I can fit into my day. I recently found your channel, so I'm late to the game and have a lot of catching up to do. Lastly, you asked for suggestions and I'd love to see a polenta recipe. I grew up eating polenta but only had it when my grandmother made it. She's since passed, but I once asked her how she made it. Her description was vague because she seldom wrote recipes down because she said it was all in her head. She would make a savory creamy polenta and then she also made a cold polenta with fresh, raw, and very finely chopped kale. She would serve this version cold. It was delicious! I'd love to see your take on this. Thank you.

I just made this it looks amazing. This baked ziti also tasted great.I used four cheese also, I buy parmigiana ragiano, and pecorino romano and grate it myself. I have a suggestion lasagna, it’s a layering dish completely. Thanks

Make whatever you'd like as I am loving it all. I have to adapt recipes (whole wheat, chickpea or lentil pasta) as I am diabetic but the sunday sauce is perfect!

Love the channel! Great stuff here. I was wondering if you know what these things my grandma used to make are. She would make these things (I don't know the right spelling) but they called them "Caleshoon". I think it was like a lasagna noodle cooked then filled with cheese (probably parmesean and maybe something else) then sealed, egg washed and baked. I've never seen them anywhere and I never really learned how to make them - so the above is just speculation. It might have been something she just did, but maybe you might know more about it. Looking forward to more videos! Cheers

Your recipes are great, BUT if you can introduce slowly what cheeses you use that would be Easier. Otherwise your recipes are really hard to follow.

I just made your Sunday sauce two days ago so it had time to cook and than made this recipe last night. OMG....it was amazing and so easy, my two favorite things with a good recipe. I invited my friend over last night who is quite a good cook herself and she said that it would give any restaurant in the area a run for it's money. Love the videos. Your pizza series inspired me to try my hand at making my own pizza. I have to say for my first time making pizza it wasn't to bad. Your Sunday dinner series reminds me of the times I would go with my parents and siblings to my father's parents house. There was braciole, meatballs and sausage in homemade sauce and pasta. At Christmas my Grandmother would make the Seven Fishes feast. That was fantastic. With the holidays coming up would that be something you could culinarily explore? Thank you and keep this going. Italian traditions, especially around food are very important.

My Sicilian partner of 4 years pronounced it "ray koh tah", and he was born in upstate New York, his father from Brooklynn. Sounds like you are saying it 'ree go tah"... His dad is from blocks away from you, and I wonder, do you ever run into locals who pronounce it "ray koh tah"? It's interesting that dialects continue to evolve outside of a country of origin, similar to the differences of speaking American, Canadian, English and Australian...and NZ (&parts of India)! It's just me, I'm into language variants.

Normally people in NY metro over 40 or 50 (not just Italians) drop the vowels at the end of Italian words. Ricotta sounds like rigawt, calamari becomes calamad, manicotti becomes manigawt, etc I try to say it correctly but I can't change the g sound that I've been saying all my life. Many New Yorkers accents are far worse than mine lol.

Great stuff man! I’ve watched just about all your chicken videos. I was nyc earlier this and had a chick dish called “chicken contadina” the restaurant was called carmines. Is that stuff the same as chicken scarp?????

Hey I've never had the recipe at Carmines. Based off the copycat recipes online it looks a little different than chicken scarp. Looks closer to cacciatore as far as I can tell. I'm always looking to make new chicken dishes so I'll investigate further. Thanks for liking the videos!

It is 7:47am I’m having my morning black coffee. Have not had breakfast and watching your video of this wonderful ziti pasta. I’m trying to eat well for the most part and lose some weight. Problem is I LOVE pasta one of my favorite dishes. I’m Latina so I love to cook. Your one of my fav’s. I’d say #1 on my list. I am salivating watching you prep this wonderful dish. Love your videos...Italian American is one of my fave cuisines...and I love the authentic dishes too. So glad I found you...I used to live in NYC and I really miss not seeing some of these dishes where I live now...Oregon. Let me throw a monkey wrench into things...I stopped using ricotta for pasta dishes a long time ago. I don't know...the texture bothered me sometimes. I use large curd cottage cheese now...seems so much creamier.

Is there anything more satisfying than homemade sauce and pasta? And cheese? And then you throw in those crispy browned edges! What more could anyone possibly want? Maybe meatballs. Sometimes I sneak teeny tiny meatballs into my baked ziti. But that's just me. I'd sit at your table and feast on your dishes any day!
