When it comes to living on the road a lot of people think they are not able to make certain types of food because of limitations. Today we are breaking the myths that you cannot have baked goods in a small space as I am sharing a recipe I am adapting for the road.

You can buy a small container of already mixed eggs! Also, try unsweetened applesauce instead of oil. Yummy!

They didn’t have then where i was unfortunately all the eggs were just whites and mostly southwest which would have been weird lol

Oh yes! And in the fall I love spice cake mix and a can of pumpkin (not pie filling). Nothing else unless your're not not sensitive which I'm not so I do add those and they are super delicious. And I do mean JUST a boxed spice cake mix and a can of plain pumpkin. That it unless you want to have additions. It's great!

@@jenne8180 a coworker was the one who told me about this cupcake “recipe” with just a box of cake mix and canned pumpkin because I’m vegan. I’ll have to try the spice cake mix in the fall. 😃

There is a compact 130 watt electric oven that came out earlier this year. Not sure if you've seen it, but it would allow you to bake inside during inclement weather if needed. Being only 130 watts, it can operate on most portable power bank systems. It's compact size (13"x11"×8") can accommodate two pans. It has a timer up to 2 hrs, so you just set your desired temperature & timer. A great benefit is that it is 12v. It comes with 2 wire oven racks and a stainless steel baking pan. You can use foil trays or oven bags to save water cleaning dishes. It's a good option if you cannot cook outside due to weather, location (i.e. park lot), wildlife, etc... I had to adapt my baking to van life too. I got myself a Coleman folding Camp Oven that you sit on top of a flame and it has a temp. gauge built into the door. I also got a pizza stone to put in it for baking and making pizza. The other thing I use is a cast iron Dutch oven and it can be placed on an induction top or a flame. I set a round grill plate in the bottom of it while cooking so as not to burn the bottom of items I am baking. Makes van life so much better when you have to eat gluten-free. I like your Ridgemonkey and have seen a lot of campers using them. Your brownies look oh so yummy. Thanks for sharing with us today.

Brownies are definitely my favorite baked good. I've used brownie mixes where you just add some water and they're quite good. I love every kind of food...the only food that I know in the world that I do not like is raspberries. Yes I'm the one!

You can also use a dollop of mayo, not salad dressing, as egg substitute in baked goods.

Yes, absolutely sometimes I do use honey in various things when I’m baking at this time I just didn’t have any honey in my van. I try not to carry anything like that and it’s container because sometimes due to pressure it can leak and honey is one of those things you don’t want swirling around in your van leaking lol I usually use the little honey packets which are much better and 10 to hold up in more conditions but unfortunately I was out of them at this time.
