Purpose of zeroing is to mimic the position of meatus and condyle as in the patient. So in patient there is a starting point where all movements begin. Similarly we do in articulator also. So we have to start programming from this point.

And it varies according to articulator and the manufacturer instructions

About the angles I think we select as per average value of population. Incisal guidance is 0 because it fix the anteriopost position of the guide table with wings to default to make sure it has not moved out of position.

Mam in facebow the fist screw for adjustment of vertical height screw no 2 for midline and screw no 3 for bitefork locking crct me if iam wrong mam.. question is why it should be tightened in 1, 2,3 order not in 321 order.. any reason this was asked in mock exam mam.. is the question crct mam...and any other significne for screw 1 2 3 mam??
