#Balchao de #Porco. A classic recipe from the era when the #Portuguese ruled #Goa.
Balchao is traditionally made with prawns but works very well with pork too.
The pickled dish is spicy - tangy with hint of sweetness. Copious amounts of #toddy vinegar and #feni (replaced with regular vodka) ensures the longevity of the dish. In addition as is typical of pork the longer it sits in the freezer the more flavourful it gets.
Balchao is thought to have originated from the #Macanese #Balichao (#Macau and #Melaka were Portuguese territories). Another school of thought shares the Bachao / Balichao could be a spin off from the word #Belachan (shrimp paste) from the Malay peninsula.
I have not added shrimp paste to my Balchao. It's an amazing dish that's both historical and delicious. Its a must try.
