Recipes call for
Black eye peas and rice
Add 1 cup of black eye peas to saucepan with 4 cups of chicken stock
1 cup of bell peppers
1/2 onion
fresh thyme (optional)
3 finely chopped scallions
Let boil until peas has soften when squeeze but still firm to touch
Add salt, A little at a time, taste and be satisfy with flavor before adding rice.
Add 2 cups of rice, you may need to add a little more chicken broth to cover rice if some broth has boiled out.
Cover saucepan tightly and lower stove, do not stir rice.
Pork Chops
Sprinkle on one side of your pork chop, black pepper, all purpose seasoning, paprika and Jamaican Jerk seasoning.
Add seasoned side of pork chop to flour and repeat process.
In frying pan add 2 tbsps. olive oil, 2 tbsp. of butter place pork chop in heated oil on high and let brown.
Remove Pork chops for pan and place in baking dish.
Left over oil in pan, add 1 tbsp. ketchup, and some more jerk season, pour all over pork chops and place in a 350 over for about 20 mins to cook truly.
Greens
shred Greens finely, chop 1/2 onion, 1 cup chopped bell peppers, 3 scallion chopped, fresh thyme {optional).
In large pan add 2 tbsp. olive oil, 2 tbsp. butter, and all greens and fresh vegetables.
Cover and lower stove.
Seasoned to taste.
Corn Pie
1. 14 ounce can of cream style corn
1. 14 ounce of corn
2 eggs
2 tbsp. flour
1 tsp baking powder
1 jalapeno pepper
1 cup of cheese your choice
Beat eggs and sugar.
Add corn, flour, baking powder, jalapeno pepper and cheese to liquid.
Place in greased baking dish
Bake at 350 for 30 - 40 minutes.
Serve meal and enjoy.
