Ingredients for khoya! 2 cups full cream milk powder, 200ml thickened cream. This is fresh cream its called whipping cream in US and double cream in UK.
Ingredients for sugar syrup! ¾ cup white sugar and ¼ cup water.
Other ingredients! 3 drops of rose water max, 2 green cardamoms powdered, thinly sliced badam.
This barfi can be kept 1-1 ½ week in fridge, it will be fresh or you can freez this as well. It is firm when its cold.

I asked this question as I have seen many HALWAIs adding granulated sugar to the khoya while keeping the mix on the stove. They bring the mix to a boil for some time (I don't know for how long) then they turn off the stove and start shaking the mix with a big ladle like tool . They do it really hard and long enough then they check something before pouring the mix into the tray. It stays quite liquidy till this stage and then you get the kind of barfi that you know of much better than what I do.

Bajia g I watch ur.videos.to.learn and Maa'shaa'Allah u make me.smile every now and then like when.u.say. U really.work.on the presentation.lol.anyway I tried ur gulab jamuns as well so yummm and Maa'shaa'Allah had visitors around all.week. Only.made other food likr salan. And my dessert was sorted. Everyone loved them.

did you mix all when khoya was warm ? i think your khoya got cold or dry too much, do it step by step, 2 min then mix and 1 min mix and see

its ok, when sugar is crystalising keep mixing, it becomes like sand, berfi is not gooey, if you cook it in sugar syrup it gets gooey. watch this clip repeatedly khoya must be luke warm

Well the reply was in HINDI (MANGAL FONT). I suspect you aren't using windows 7. Anyways I rewrite it again. I hope to have your opinion on the variance in taste in your method and the conventional method wherein the sugar is added to the warm khoya and then it melts and gets integrated into the khoya. In your recipe the sugar particles are gonna hang amid the khoya particles but they aren't bonded to them. Though I have to admit that it is the easiest and safest method. Hats off to you for that

Real barfi must break with a click, adding raw sugar makes it gooey. That is not barfi. I may have doubts about my other recipes but this is surly the way barfi is made, the result is a proof by it self

khoya dry na ker liya ho ziyadah, milk full cream ho, aur jab mix karo khoya warm ho. samne to banaye hai dekho to kaisi achi bani hai

Increase the semolina :) Use 1 cup fine semolina and add 1 tbsp plain flour. Try that and let me know how you go :)

how thick sugar syrup suppose to be? today I tried this recipe. I made sugar syrup w/2 thread and I turned off stove but sugar became like small rock pebbles :(

Its a hard and long process, and the result isnt that great. Not very promising. Just cook in a non-stick pan until the milk thickens/dries. Good luck
