Cortados are one of my favorite espresso based drinks, and a ristretto shot is a cheat-code for a sweeter, more syrupy extraction that pairs very well with milk. So in this installment of my morning routine I break out my barista skills on Ascaso UNO and the Mx.COOL Aries.

My #1 wish for home espresso machines is that someone will engineer a vibration pump that's totally silent. Elon Musk lands reusable rockets on milk crates in the middle of the ocean. A silent vibration pump isn't asking for too much.

They are not Silent, but the Quick Mill and Lucca have a Pulsar that lowers the sound and evens out the pressure pulses on their Vibration Pump Machines

💯 AND a thermoblock that doesn't thump, thump, thump - The new Ascaso machines are sexy (I have an older Steel Prof Uno) and I love the eco aspect of not heating up boilers all the time, but man that thermoblock steam thumping really cheapens the package.

Hey, X-video editor here. Before exporting (all videos but especially ones like this) add a very very small audio cross fade/transition between all your clips it will go a really long way in that “blip” or “click” you hear every time you cut from clip to clip. On FCPX this is very easy: Cmd+A then Option+T. On others there should be easy ways just google or tell your editor to start doing it. Hope this helps and would love it myself as a viewer. Cool workflow!

5:30 leaving the portafilter locked in like that for extended periods of time, before finally pulling the shot, hurts the quality in a really big way in my experience. Much quicker shots. What I do is, really press the button/pull lever as soon as I lock it in. Have you ever given it any thoughts?

How did you come about this UNO? And may I ask why you went for a single thermoblock machine from them? I am really, really intrigued by their Baby T, that would've been a blast, had you taken a look at that one. Maybe in the future, if Ascaso and you would partner up in the future...? Hope you have a good day. Coffee looks delicious, but entire workflow with the grinder and the single block looks too tedious.

Fail! You should have WDT with funnel still attached to the portafilter and then a slight tap on counter before removal to prevent that tiny mess and coffee loss. Also tamp was slightly out of level. Better luck next time. 😏

This machines manufacturer recommended a 10-11bar pressure for “best performance” so when I used it for this video I left it as is.

Shouldnt the steam continue to come out if the pump is working? Or I suppose it depleted the steam?

@@rnrnrkrk994 No, there is another rotary knob on the side to discharge from the steam wand, the pump will still be active regardless - it has to be on to brew or steam. 1 pump for the whole system

You have the Uno and set the OPV to 9 bar? Does everything work fine at 9 bar... I know some people say their Ascaso OPV has some chirping and the pressure bounces off of the limit if you set OPV lower.
