It's oddly satisfying that you're wearing the same thing in your cookbook, video, and profile picture. I know, they were probably all just done at the same time, but I like to imagine that you just always look like this.

I would like to see a recipe for Japanese mayonnaise, as I have never read of it and you have mentioned it two videos. I'm impressed by your site. Your delivery makes excellent use of your voice. I just subscribed tonight and I am going to start buying the products you use. Thank you for sharing with all of us.

Basic ramen, Soba, and gyudon (pork cutlets) would be somewhere to start. Rice bowls are pretty easy. Stir fry is good for getting rice cooking times and how much water you need down.

Miso soup is probably the best place to start honestly. It gets you accustomed to dashi, its strengths, its limitations, and making it from scratch.

@@jadepaw1248 Pretty sure Gyudon is beef, not pork. Katsudon would be the pork cutlet bowl.

This question may have already been asked but do you have any sources that might suggest the best brands and types of ingredients to purchase (ie:kikkoman etc. Or even dark soy, light soy, double dark soy). Whatever the ingredient might be, a guide to purchasing them at an Asia market where everything may be written in Japanese or Chinese script for us illiterate folk. That would be an invaluable resource for me to start building a Japanese pantry. I hope to hear back! Thank you!

I've watched a few of your videos now and learned a lot, but I have one big question that's been bugging me. Are you from New Zealand? 'Cause I could swear I recognize that accent, and it doesn't sound quite Aussie to me. Keep being awesome though, I love your videos.

James Hortle dashi is just Kombu and Bonito Flakes simmered in water

Even if it is usually cooked homemade you're right, dashi is vital.
