INGREDIENTS:
Cake Batter :
4 whole eggs
1 tbsp vanilla extract
1/4 cup milk
2 tbsp dark rum (optional)
3/4 cup sugar
3/4 cup brown butter
1/2 cup cake flour
Chocolate Glaze:
1 cup dark chocolate
1/2 cup heavy cream
1tbsp dark rum (optional)
1/2 envelope of gelatin
1/2 cup water

I tried it today... Hmm, the mix ended up being really thick and hard to swirl around, and so used the back of a spoon to spread it instead... How was yours?

the first time i made it, it was soooooo soft and yummy. The smell coming out of that over was unlike any thing else. I think it's the brown butter. the second time, i doubled the recipe, i used a glass dish to bake in instead of metal, i used margarine instead of real butter, i reduced the amount of sugar and everything just came out hard and yuck. All my fault. cant wait for to try it again properly

Haha that's so cute watching non-germans say Baumkuchen.. It's sooo wrong but that's so sweet! But: That's not how you eat it! O: haha the best way is to peel every layer from one piece that's why in germany the cakes are higher and not as wide; so you have more layers to peel :3

Eek! I definitely need to brush up on my German (as if I ever spoke German...lol), but I gave it a go anyways! Sorry if I've offended anyone regarding my pronunciation of 'Baumkuchen'. I honestly hope you try it out for yourselves because It was SOO easy and ridiculously delicious. It's definitely a crowd pleaser. Hope you all enjoyed the video and thanks for watching. ;)

I get irked when people make fun of folks on youtube whose first language isn't English and they mispronounce words, and vice versa when English-speakers try to pronounce foreign-language words.

This recipe works supremely and successfully mimics the 'nutty' taste of this cake with the brown butter rather than the more-expensive marzipan. It was delicious without the chocolate glaze, but I couldn't imagine that chocolate could do any harm. A few tips: 1) On how to make brown butter, simply place it in a light colored pot, melt it while continually stirring it, watch for the liquid to become a gold-brown (do not be fooled by the color of his brown butter, because his is in a small container and the butter continues to cook after the heat is off), turn off the heat and stir for a few more seconds, then transfer to a pouring container. You will smell a delicious nutty scent from the butter and you'll see the solids at the bottom of the pan -- not burnt onto the pan however... hopefully. 2) Also, be generous in beating the batter -- mine took almost 25 minutes until it reached the desired consistency. 3) If your broiler is not separate from your oven, bring your rack up to the first or second notch (depending on the arrangement of your oven). I brought mine to the second, which is approximately 8-9 inches from the heat source. Then watch and check your cake consistently. Don't worry if there are bubbles when you take it out -- pop them with a knife, wait for them to deflate, and then add your next layer. 4) The first layer ain't going to be too pretty -- it should be splotchy and only slightly browned to the extent that you'll want your other layers to be. 5) Please be careful! Whether your broiler has a temperature setting or not, the oven, the cake, and the pan will be searing hot. Also, take care to practice patience when waiting for this cake to cool -- it'll be worth it. Best of luck to all of you. It's a gorgeous cake, an impressive dessert, and a flawless first-mouthful.

***** It is a bit rude to claim it is ignorant of him to pronounce the word wrong. Every language is different, and thus each person has difficulties pronouncing sounds that are not common in their own language, such as the 'ch' in German, or how some Asian people cannot pronounce an 'r' well. Most Germans cannot pronounce the rolling 'r', so it sounds weird when they try pronouncing Spanish words. I have Spanish and English friends whom i've tried to teach some German and it is always funny to see them work so hard to pronounce it right and yet it still comes out wrong, even if they repeat it directly after me. I am German as well, and I don't take offense in Byron's inability to pronounce the word at all and I am pretty sure if he could pronounce it correctly, he would.

Baumkuchen is one of my absolute favourite cakes as well! I love the density of it in opposition to a bisquit cake for example. I am from Germany, and everytime I see a fresh, handmade Baumkuchen (most of the time it is really high and resembles a tree stem/trunk, whatever you call it ^^) in the window of a bakery, I have to run inside and buy a piece of it. ;-)

My grandparents made it similar to this. Except they made it with beer (We lived in Germany) and instead of using the gelatin. They poured condensed milk and melted chocolate over the cake. Waited for it to dry and mixed the yolk of the egg until it became thin and liquidy. Then used a brush to evenly spread it over the cake giving it a super shiny glaze. The egg glazing is tastless btw.

In Germany (where I am from) there are a lot of stores who sell this and I once saw an Video in RU-vid where they showed how this cake is made. They make a long cake (around 10m longs) and cut it after its done into around 15m high cakes or they cut it into small peices (like the pieces you get on christmas)

Bis heute ist der Baumkuchen nicht nur DER beste Kuchen den ich jemals hatte, sondern er ist auch ein wichtiger Bestandteil meiner Kindheit. Ich erinnere mich noch gerne an die Zeiten, als ich in der Nähe von Schliersee in Bayern in einer kleinen Ortschaft im Urlaub war und ich diesen ganz leckeren Kuchen dort essen durfte :)

I have no idea why anyone wouldn`t like this video because it is all very clear, organized, great video/lighting/audio work and you have a very easy voice to listen to. I like that you focus on the ingredients, technique and results rather than yourself as a RU-vid personality. I like your personality, but you let the recipe take the stage - thanks. So interesting how this is made, and I am curious about how the brown butter tastes. Another thing I learned from you is to add gelatin to the Pariser Creme for the shiny glaze. I`ll have to try it as I am planning to bake some things for a Christmas charity fair. Good job, as always, Byron!

I believe this is schichttorte, this traditional German dessert is total fruit and chocolate satisfaction. Schichttorte is a simplified version of baumkuchen, a cake baked on a horizontal spit.

"Forest cake" is a better translation of the German. These are a dying art in Germany, but Japanese love them and make them on the regular (in bakeries).

"baum" literally means tree so dunno where you're getting the forest from... (it's called baumkuchen because if prepared the traditional way it looks like rings in a tree if you cut it up) and they're all over the stores in Germany around christmas time! I've home-made Baumkuchen a couple of times but most people don't bother and rather make a simple fruit cake, marble cake or swiss roll.

haha, that was so sweet the way he pronounced it :D It's more like "bowm-koo-hen" (with "bow" as in 'bending your back' and the h being pronounced like half an h and half a k almost; like people sometimes say the h in Hanukkah)

saskewoo German is very hard for Americans to pronounce correctly. But the same is true for Germans and English. Just think of Schwarzenegger. Otherwise great recipe.

Fun fact, in germany they make these on rotary broilers that look like horizontal rotary grills. You just pour the batter over the roll, let it turn a few times until it bakes brown, then you pour on the next layer of batter. At the end, you just take the entire roll off the thing, cut it into cake sized pieces, and glaze over with chocolate.

+39abc93 Most non-german people have difficulties pronouncing the harsh 'ch', so considering that, he did a pretty good job. Anyways, love the recipe, but oh it takes so much time. Maybe I'll try the box Baumkuchen recipe. :)

+xAnicsi the 'ch' is not a harsh sound people just asume because its german, its just a stereotype everyone likes to believe, jiddish and ivrith(new hebrew) have the same sound even spanish to some degree for example jalapeno in this case you could change 'ch' in Baumkuchen to 'j' from jalapeno and you would be able to pronounce baumkuchen

It kind of sucks that people are making fun of his pronunciation. Giving somebody constructive criticism and just laughing at their attempt are two completely different things. I can understand that there was no ill intent behind most peoples' comments but as an esl teacher, it's this kind of ridicule that makes it difficult for people to practice a new language..

Please help me! He says to incorporate the brown butter half-way thru the process, which means to add it in at around 5-7 mins of high whisking. Yet, it looks like he added it in at the end after ~12 mins of whisking. which one is correct? Do I whisk on high after adding the butter or did he just accidentally say that?

Wait a moment... For me as a transilvanian german, this is NOT a baumkuchen but a Doboschcake. A baumkuchen is a cake that was baked on a small piece of a tree and with caramellised sugar on the outside. Both of them are often served at weddings and birthdays. Ist das in der deutschen kultur wirklich ein baumkuchen???

MrDersiffer jap ;) aber ich kenne auch das was du meinst. Das heißt tatsächlich auch so und schmeckt ziemlich gut. Aber ansich ist baumkuchen eben der kuchen hier, dens auch immer rund um weihnachten gibt - zumindest in süddeutschland. Obs das auch im norden etc. gibt keine ahnung :)

Very similar to kueh/kek lapis! Just that we don't usually put glazes of any sort on top of such cakes, but this is a good idea.

ByronTalbott When I make this (I've made it several times) the batter bubbles up and the layers don't stay together. It also has this weird gummy texture. It worked out perfectly the first time I made it but it hasn't turned out well since. What do you think I'm doing wrong? Is there something I can fix?

Casey Gondoly The exact thing happened to me where the second and third time the end product was rubbery without layer seperation. :( I think I over mixed the batter and deflated it.

sophie patterson broil is a great method for getting grill-like results in the kitchen. (your oven has a broiler, not a griller) Remember, you can broil or grill a steak, but you cant grill a cake.
