BBQ Smoked Meatloaf in the Pit Boss Vertical Pellet Smoker

If you are looking for a quick and easy BBQ Smoked Meatloaf Recipe, this video is for you. The Pit Boss Vertical Pellet Smoker puts out just the right amount of smoke where it doesnt overpower all of the other ingredients in the meatloaf.
After smoking the meatloaf for 2 hours at 225 degrees Fahrenheit, it came out with a nice little smoke ring and was very juicy.
Add your favorite bbq sauce on top of the meatloaf about 10 minutes before its done and you are all set.

Ingredients: 2.5 lbs ground beef or mix or beef, pork, and veal Approx 1 cup of panko bread crumbs 1 red pepper small diced 2 jalapeños diced and seeds removed 1 cup thinly sliced green onion 3 cloves of garlic minced 2 eggs beaten 1 tablespoon Pit Boss Smoke Infused Rub mixed into all the ingredients Head Country Original Seasoning (first layer of rub on outside of meatloaf) Heath Riles Pecan Rub (second layer of rub on outside of meatloaf) Set Pit Boss to 250 degrees and smoke the meatloaf until it reaches an internal temperature of 160 degrees F. Brush on your favorite BBQ Sauce and put it back in the smoker for about 10-15 minutes.

I've made this a half dozen times and Makin it today for the game. Ground beef pork and Italian sausage. Most of the rest. Plowboys yardbird rub. Turns out INCREDIBLE! My favorite go to..... One to eat for dinner. One for sandwiches.

I have never seen a meatloaf mix but I love that. I know that would make it more flavorful than just a beef mix. This is one of the best meatloaf recipes in have ever seen ! So much flavor. I am a huge fan of big pieces of peppers/onions in the meatloaf. Looks so delicious! :)

I love how you put the ingredients into it . When smoking we let the rub sit to “penetrate “ the meat . Doing it this way let it go into it . Then the fresh ingredients that complimented the seasonings inside is straight Flavor ! Good my man. Keep it up, keep learning , and keep recording ! You’ve got a fan in me . Cheers !

Two pounds of beef and one pound of breakfast sausage on my camp chef and it just sails. We have a slaughterhouse nearby but not much in the way of fancy grocery stores. A bit of breadcrumbs and heavy black pepper. I make meatloaf so manly I had to shave my daughter’s back before I sent her back to her mom.

Saucy Sows makes a pepper heavy rub that’s real good on it too for $5 a bag. Their moonshine mustard is awesome too. I use it in my Carolina gold barbecue sauce.

@weekend warrior bbq . Use a cooling grate on top of a 2in deep tin to cook on. It allows smoke to get all the way around and all mess is contained in the throw away tin.

Wow! That was really juicy Mike. The spider was.....far from home (ba-dump!) I mix stuff much like you do and it's rare. A lot of people put the egg and veggies and seasonings on top and then mix. That just never seemed like a person could possibly get it thoroughly mixed unless you mixed it a long time and overworked the meat, making it too solid when done. I thought I was alone in mixing everything first then putting it into the meat. Anywho I have smoked meatloaf before just never filmed it. I have not been happy with any of the attempts yet. Still working on it. But this might be the next thing I film. Good video.

Set meatloaf on rack and add maple and brown sugar oatmeal when mixing ,maybe Add bbq sauce while mixing . That's how I make mine

over-smoked ? Lots of questions. can you control the amount of pellets, when you use the pit boss ? I have had meat that is smoked too much. over powered with a bad taste. I would like a little of the smoke flavor for the first hour or so, and then just heat only, for the next 6 or so hours. I am thinking of purchasing one. Also, are the wood pellets readily available? Like lowes, home depot, tractor supply and wal mart. Where is the best place to buy bulk hardwood pellets that are used in smokers? Are they the same hardwood pellets that people use to heat there houses with ? Thanks you for your responses. I'm 99.9% ready to pull the trigger on a pit boss before their all gone this christmas, jc

It is almost impossible to over-smoke something in a pellet smoker. The pellets put out only a light smoke flavor which is what my family likes. The way it works is the higher the temperature you cook, the less smoke flavor. That is how you control the smoke flavor. 275 degrees F is the sweet spot for us. Pellets are available at most big box stores. Lowes, Home Depot, Ace Hardware, Dick Sporting Goods, etc.

Hi, Ron! Yeah, you can put a foil tray on a rack below or directly under the meatloaf. The downside to putting it directly under is the bottom will be a little soggy but that's no big deal... It will keep your smoker clean and that's a fair trade :)

Love the video! Love the recipe too, but I need some help! I made this meatloaf in my pit boss vertical smoker. I followed your video almost exactly, just used a different rub. I checked it periodically and got it up to 170 in the center. I went inside and started eating. Delicious! My wife got a piece from the middle and it was rather pink on top. But the bottom was well done. I thought, it’s the smoke ring, but it looked like the meat was undercooked. Am I crazy? Please help Mike!

Thanks, Tyler. That was the smoke ring. I have actually smoked burgers in the past and thought they were under cooked even though my temp probe said they were cooked perfectly. The smoke ring went all the way through and the whole burger was pink.

It is the Weber iGrill mini. I dont recommend it due to its limited bluetooth range. I just started using the Inkbird IRF-4S. It doesnt have an app but at least the receiver works from far away.

Hey, John. Yeah, I'm testing out posting on different days of the week. With the NFL season starting I'm not sure Sundays will be the best day but we shall see. I'll get the ingredients list updated over the weekend for you. As for the hand held temp probe, Its a ThermoPro TP15. It works great and was less than 20$.
